Ingredients250g stoned, chopped dates300ml water 85g plain flour 85g wholemeal flour 3 teaspoons baking powder 1 teaspoon mixed spice 500g mixed fruit (sultanas, raisins, cherries, prunes, apricots) 50g ground almonds 80ml orange (or any other fruit) juice |
Handy HintYou can use any mixture of fruit or crystallised fruit, so the cake is different every time. Try pineapple, papaya,crystallised ginger - anything you like |

MethodPreheat oven to Gas 3 (170c) and line a 900g (2lb) loaf tin with baking parchment or similarPut dates and water into a pan and bring to boil. Sieve flours, baking powder and spice into a large bowl (and add the bits of wholemeal flour left after sieving) Add the mixed fruit and ground almonds, stir to combine. Stir in the date mix and juice and mix well. Spoon into tin and level top. Bake for approx 45 minutes until done. |
