MethodHeat your wok gently and melt some lard (or your preferred fat) in it while you chop your leek—slice and then criss-cross the slices roughly.Chuck leek in wok and toss it about. Add some turmeric and ground cumin and toss about some more. Chop the cabbage and add it plus some salt to the wok. I put a lid on my wok at this stage and let everything 'soften down'. Add some butter if it's a bit dry. You can crisp things up a bit with more heat if you like. | |||||||||||||||||||
