Ingredients4 large egg whites50 gr light muscovado sugar 175g unrefined caster sugar 1 tsp cornflour 1 tsp white wine vinegar 300ml whipping cream 1 tbsp icing sugar 1 tsp ground cinnamon Berries Pomegranate seeds |

MethodPreheat oven to 140 degrees CWhisk egg whites to stiff peaks Add sugars 1 tbsp at a time whisking all the time. Add cornflour and vinegar with final addition of sugar. Pile mixture on to a baking tray lined with baking paper and form a circle (roughly 22cm round). Bake for 1 hour and leave in the oven to cool preferably overnight. To serve - whip the cream with the icing sugar and cinnamon. Pile evenly and scatter with berries and pomegranate seeds. |
