Carrots
Vegetable or chicken stock
Butter or margarine
Seasoning to taste
Optional Extras:

Garlic croutons
Cream
Chopped Parsley

Handy Hint

It's always better to add less stock and add more after cooking than too much and have a too-thin soup. Carrots absorb stock quickly.

Method

Scrape and chop the carrots.
Amount depends on how many people you are serving.
Sauté in a little butter until all are coated, add vegetable stock.

I like this soup thick, so I just cover the carrots but if you want a thinner soup, add more stock.

When cooked, blend smooth and add seasoning to taste (salt, black pepper ) and croutons if desired. A swirl of cream is nice.

Vegetarians and Vegans would use an appropriate butter substitute and omit cream.
