Ingredients1 x 500ml tub of good quality yogurt2 x 500ml tubs oats (use empty yog pot) 2 x tsp baking soda 1 egg Handful each sunflower and pumpkin seeds |

MethodMix egg and yogurt.Combine with dry ingredients. Mix well and spoon into a lined 2lb loaf tin. I top with a sprinkle of seeds pressed down. Bake for 45 minutes. Remove and carefully turn loaf upside down. Return to the oven for 10-15 minutes. Every oven is different, check if it's ready if a skewer or cocktail stick comes out clean. This is a very forgiving loaf, it doesn’t mind a few extra minutes so err on the side of over rather than under cooking. |
