I'm wondering if it's just the hot weather.

I had a ginger cake that did that sinking thing, so I covered it in icing. And forever after it was ' Ginger Disasteer Cake'. Very popular it was too.

According to the Sainted Mary, too much baking powder can cause a cake to collapse.

Has your oven thermostat got less reliable?

Fill the hole with fresh fruit, mixed berries for instance cover the rest in whipped cream and chocolate shavings and serve as a nice dessert.

Just scrape the middle out, put a bit of icing on the "ring" with a few 'hundreds and thousands' and hey presto!

Maybe the flour is at fault, or the oven isn't heating properly.

Have you changed anything? eg oven, recipe, brand of SR flour or baking powder?
I've noticed that cakes flop if the batter is too wet.

My cakes keep flopping. This is my third in a row (Victoria sponge so not complicated) and the first two didn't rise and the third came out looking great and then slumped so there's a huge dip in the middle. Help!
My cakes used to be quite lovely and I'm beginning to take this personally...
