Ingredients

310g plain flour
1 tsp cinnamon & pinch salt
225g caster sugar
1 tbsp baking powder
2 medium eggs (beaten)
55g each of sultanas and cranberries and pine kernels and white chocolate

Handy Hint

These make lovely presents - if they last long enough - enough to give and keep!

Method

1. Preheat oven to 180C.
2. Sift the plain flour with the cinnamon and a pinch of salt into bowl. Add the caster sugar and baking powder.
3. Gradually mix in 2 beaten eggs.
4. Add the sultanas, cranberries, pine kernels and white chocolate
and mix well till combined.
5. Divide dough into 4, lightly dust surface with flour & roll each piece to 8" long, 1" diameter.
6. Place on silicone sheet 6cm apart and bake for 25-30 mins.
7. Remove and cut each biscotti on the angle into 12 pieces.
8. Return pieces to oven at 140 deg C for further 25-30 mins till golden brown.
9. Transfer to wire rack and allow to cool completely - will then last 2-3 weeks in airtight box.

These are fine with all 3 of my nut allergic generations, though be careful if you are unsure of pine kernels personally. Remarkably simple and certainly lower fat than many biscuit recipes.
