Ingredients

1 - 3 fresh green chillies (chopped finely)
2 spring onions (thinly sliced)
handful of fresh coriander (roughly chopped)
3 ripe avocados
1 ripe tomato (cut into small dice)
juice of one lime

Method

1. Put a spoonful each of chillies, onion and coriander into a pestle and grind to a paste.
2. Peel avocados and mash flesh into a chunky paste.
2. Stir in the chilli paste.
3. Fold in remaining ingredients.
4. Add lime juice and salt to taste. Serve immediately
