Ingredients

Loaf:

300g strawberries (crushed)
60g butter
200g plain flour
200g caster sugar
2 large eggs
1½ tsp baking powder
½ tsp cinnamon
salt to taste
100ml fruit tea (I used wild berry)

Icing
Icing sugar
wild berry tea (or whichever flavour you choose)
100g sliced strawberries
mixed nuts (chopped)

Handy Hint

Freezes well but remove the strawberries from the topping.

Method

Preheat oven Gas Mark 4/180°C

1. Cream butter and sugar then add the eggs until the mixture is fluffy.
2. Mix together the flour, baking powder, salt and cinnamon and add gradually to the creamed mixture with the wild berry tea.
3. Add the strawberries last.
4. Pour into a greased loaf tin and bake for one hour. Leave to cool before icing.
5. Mix icing sugar and warm wild berry tea.
6. Pour the icing over the loaf and decorate with strawberries and chopped nuts.
