Ingredients

1 large bag of spinach
4-5 eggs
150g crème fraiche*
150g grated mature cheddar*
1 slice of bread crumbed
1 crushed clove of garlic (optional)

Handy Hint

Serve with green salad (rocket is nice), tomatoes, crusty bread and blob of mayo *Just as tasty using low fat cheese, crème fraiche & mayo

Method

1. Put spinach in pan without water and wilt. When cool squeeze out all the extra water (very important)
2. Beat eggs, add crème fraiche, garlic (if using) add most of cheese (keep some back for topping)
3. Finally add spinach.
4. When everything thoroughly mixed, place in greased loaf tin,
5. Mix together bread crumbs and cheese and sprinkle on top.
6. Bake in middle of oven for about an hour until cooked and springy to touch.

I would have liked the oven temperature I am guessing at the moment so hopefully it will come out OK!!
