Potato side dish recipes please - preferably easy

We are having a creamy, marsala chicken dish next week and I'm looking for fresh ideas for potatoes to go with it.

For various reasons, rice or pasta are not options.

Esmay

Wash and boil some waxy potatoes in salted water .
Set aside .
Mix Hellman's mayonnaise with double cream and and flavour with Dijon mustard.
Add any of the following :
Finely cut hard boiled eggs , spring onions ,celery ,gherkins and capers to taste .
Decorate with parsley.

Or as you've made a curry dish :

Omit the mustard and mix in some çurry powder .
I always do it overnight because the flavours need to develop .
Add finely chopped ingredients as before and top with plenty of freshly chopped coriander instead of parsley.
I tend to serve my potatoes salad warm .
I've made potato salad for 50 years without any complaint.

I think kittylester said it was an Italian dish, not curry - and as it was very creamy she didn’t want creamy potatoes

Sorry re-read your post .
Chicken marsala is not suitable for my potato salads -too creamy and spicy .
I'm used to veal marsala which I serve with a plain salad and lots of fresh green beans .
I think that I'd serve chicken marsala with boiled potatoes tossed in butter , spring onions and a little garlic and sprinkled with dill . Plus green beans !

I tend to serve my potato salad with cold meats especially when I have a lot of guests and need to make a great deal of food .
You can't best an Italian fruit salad for dessert .And if guests are still hungry then Italisn ice cream .

Italian roast potatoes :

Roast the potatoes in olive oil - not virgin .
Add cloves of garlic and sprigs of fresh rosemary .

Friend swears by this. Chopped egg, beetroot, and potato. Olive oil and lemon or mayo. No quantities, just what you've got. About to have a go myself. Recipe Italian in origin.

I too was going to suggest Parmentier potato. Right sort of colour along side creamy dishes.

Well-seasoned mashed potatoes, extra delicious with a few chopped chives mixed in.

Smashed potatoes: any will do. No need to peel, just a good scrub. Chop up and boil until cooked. Lay them in an oiled roasting tin, smash/rough them up a bit and drizzle with olive oil. Cook them like you would roast potatoes until crispy. Theyre a sort of cross between mashed and roast. Add salt to taste.

Because skins are eatable.they have more vitamins in...just wash under tap. cut in half and. cook...I could eat a whole small bag of jersey new potatoes.buttrr and sprinkled with salt(low sodium salt)

I just wash baby new potatoes, boil them and add
- a spoonful or 2 of vegetarian pesto sauce, or
- mint and plain yoghourt, or
- chopped spring onions or chives
- sesame seeds

Clean and cut into wedges spray with a little oil and oven cook

Italians wouldn't serve gnocchi with a meat dish it would be a separate course. small cubes of roasted potatoes cooked with olive oil and herbs would be enough ( that's after your salad antipasti and your pasta course !).

Yes, but we do not have to do what the Italians do. We can serve gnocchi with chicken curry , or cassoulet or anything else if we want to.

Think how often curry is served with chips.

Why scrape them anyway? We always have them in their skins, have done for many years.

I am embarrassed to say that I bought garlic and herbs hasselback potatoes.

It was lunch for DD3 and her family and DGS5 had his first football match before lunch so I opted for ease.

Wolfie won his football and we had a lovely lunch.
