Hi all you super cooks. I've just made a no cook cheesecake and realised that I used 1 ok of reduced fat cream cheese and 1 ok ordinary. Also whipped double cream.
I was trying to cut down the fat and realised maybe not such a good idea.
Am I going to be left with a runny mess. Guessing it won't set so well.
Any thoughts.
Thanks for reading

It should set fine, I always fold the cheese and whipped cream together, if it has t set scrape it off, melt some chocolate about 100gms and fold it into the mixture when it’s cool.
Return it to the fridge and as the chocolate solidifies it should all be set.

If it has lemon or lime juice in it, it should set.

Mind you, I made one once which didn't and it was a sloppy mess! As it was for family who were coming for dinner, they didn't mind. It tasted good.

I have bought a lovely Greek style yogurt to try. Its made by Lancashire farms.
Really thick, like set thick, not runny.
I am going to try using this tomorrow & flavour it with vanilla for my cheesecake.
Plus it has those bio cultures, so should be quite healthy. Comes in low fat & 10% fat.

Yes it is beautiful yoghurt, I only buy full fat.
The low fat may not set as well.

I haven’t seen any full fat. Just had a look at my tub, 10% dark blue.
It’s a really nice texture, almost like whipped double cream.
I like a dollop on my peaches 😋

I use low fat cream cheese and low fat greek yogurt in my cheesecakes and they always set overnight in the fridge . Instead of fresh fruit and icing sugar added to it . I sometimes put my home made jam mixed into the mix as my jam isn't sweet .

If it doesn’t set serve with spoon! Will still taste delicious
