So, what's for dinner tonight?

I live alone - like so many people of our age. On Christmas Day I just took a portion of a meal I had cooked earlier out of the freezer. As far as food goes it was a day like any other. Isn't that going to be the case for most of us?

Sheperd's pie made with the left overs from the Christmas leg of lamb + fennel, carrots and chickpeas - de-li-cious. Frozen some of the meat filling for when Greatnan gets back here. And a sliver of the Christmas cake (NO marzipan or icing- just nuts on top).

Yes, I meant to add an "etc," after "Chinese ding" - it could be any sort of microwave meal!

Ana these are definenatly "Chinese Ding" there is not a wiff of chicken to be found,if his nibs eats any more fowl he will be clucking grin but I know what you mean about the term "ding" my sister could not boil water and my DH used to say her kids lived on "beans a la ding"

grin glamma - DH always calls microwave meals "chicken ding", "Chinese ding" as well!

Looked into the depths of the freezer and found two "Chinese Ding" meals so we are having them to-night,I still have about half of the soup I made yesterday so will finish it for to-morrow's lunch,feet up to-night and relax and await the onslaught of cooking again for New Tears Day with all of the family.

No supper tonight as we've just returned from a lovely pub lunch with both DDs and their families. Turkey carcass is simmering away ready for tomorrow's soupy lunch. I still have half a Christmas pudding and chocolate roulade staring me every time I open the fridge door. I think I've hit the wall today. I just want to slob out in front of the telly tonight. blush

Grannyknot - it'll be fine, I'm sure! Well, I'd eat it anyway! I'm a great believer in just using my nose and a good bit of common-sense when it comes to using up or freezing food. We've never ever suffered from my judgements yet wink!

Hello Grannyknot I would like to say that the beef may be ok to re heat but I am NOT sure, what I do when in a similar situation is turn to the wonderful internet, fetch up Google and ask my question, its so brilliant.....

Help, please! I've been bit slow and not frozen my left overs ... hope it's not too late to do that now! Also - for the life of me I can't remember (senior moment) - is it okay to reheat the delicious pie I made last night (using the left over roast beef) for lunch today? Just thinking that's the beef cooked once (it was fresh, never frozen) then reheated in the pie, then chilled in the fridge in left over pie and then reheated again. I'm over thinking it. (Note to self: just eat the bl**dy thing).

Pasta with a gammon sauce, about to be made, and salad this evening.

After our evening meal I will strip the turkey carcase of any remaining meat. the meat will go in the freezer for later use and the carcase will be put in a large saucepan with the giblets, stock remaining from cooking the gammon and anything else appropriate and simmered for several hours to make stock. I will then drain off the stock and make soup then put the carcase in the food recycling bin and put it outside with the rubbish bin and it will be emptied between 7.00am and 8.00am tomorrow morning.

Leek and potato soup simmering away at the moment so that'll be there if anyone feels like it, but making an ordinary, though nice and spicy, chicken curry for dinner. Any leftovers are being frozen because I'm fed up looking at them!!

Last bits of the turkey and ham in a risotto, hopefully!
Plenty of mince pies and brandy butter left however, so I had only half a grapefruit and a yogurt for breakfast to prepare for the rest of the day. DH playing golf all day with a lot of other hearty types!grin

Is it more left-overs or have you had enough rich food and just fancy something simple? We have managed to dispose of most leftovers, either by eating or gifting, so tonight we will have diced potatoes fried in one pan with bacon, mushroom, tomatoes, rosemary and eggs, probably on our knees watching the telly. Bliss!!
