I have dinner under way for 5.30 - 2 chickens just gone into the oven, roasties gone in to half-roast and finish at the last minute. Home made stuffing in a bowl, carrots cooked and drizzled with honey in a bowl to warm, cabbage wedges steamed and in a baking tray brushed with butter and scattered with grated cheddar to go back into the oven. Peeled Navan potatoes ready to boil, may or may not mash them.
Two flattish chocolate fudge cakes which I will sandwich together, decorate with strawberries and serve with lemon sorbet.
Coffee and Shortbread.
Enough calories there for about 3 days.
One of our dils only eats chicken breast, no other meat of any sort, and no chicken on a bone. If I do a beef roast, there's a chicken breast also being done in a roast-a-bag.
8 for dinner every Sunday. It is ok, but sometimes I yearn for a sloppy Sunday with dh and me. Dh just loves the Sunday get-togethers and he does help with the dinner and clearing up afterwards.
