maw. Its an ancient recipe. One from my ma in law, an excellent cook and prodigious baker for the Church. It needs a pack of dried fruit labelled fruit salad, most have lots of dried apple and pear. Guess it could be done with any mix of dried fruit.
So. 8oz pack of dried fruit. 6oz sugar. 4 oz margarine/butter . 8fl oz water. 8 oz flour. 8 fl oz water, 1 tsp bicarbonate of soda, 2 tsp mixed spice, punch salt.
Chop fruit. Put butter, sugar, fruit, water, bicarbonate and spice in a saucepan. Being to the boil, boil for a minute. Leave to cool. Add beaten eggs, flour and salt. Mix (stir it together, no need to beat), and cook - 8” round tin. 180 degrees C for about 90 minutes. (Or a bit less!).
It keeps for ages, well, that’s if it lasts.
