Things to do with sweet potatoes

It's a long story, but I am overrun with them, and wondering what to make with them.

Any suggestions, please?
P.S I don't like cooking.

I have the answer to your problem - sweet potato wine!

It's an American recipe so you'll have to convert the measurements - you'll need a big bucket, this recipe is for 5 gallons (20 bottles)

I’m not mad keen but we used to get them in our first lockdown veg boxes, along with butternut squash, which I wouldn’t choose, either. So they all used to go in a Thai style soup, with onion, garlic, plenty of chilli and ginger (ready made pastes from Asda), chicken stock and coconut milk.
Which was very nice.

I love them! Polenta makes them crispy.

They are delicious in curries.

Oh, what about slicing, tossing in a little oil, sprinkling with (lots of) creole type spices and baking till soft. So delicious!

Sweet potatoes give a nice colour to the top of a shepherd’s, cheese & potato pies or a fish pie, but they are as the name suggests, sweet, so I have to season them to taste. (Might as well use ordinary potatoes?).
But if you have them, use them.

After one try, I never buy them. I had them once at a friend's house and couldn't see the point.
Another thing, for me they're very hard to peel and slice

I forgot about the shepherds pie people have mentioned on here. I used to put some seasoning into the mincemeat so it was flavoured up more than usual, boil my sweet potatoes until softened and mash down then top the shepherds pie with them and finish off browning in the oven always got eaten in my house. Sometimes just used half sweet potato and half ordinary potato it still tasted nice.
Also put my roasted vegetables in oven ( onion, red peppers,
green peppers, some cherry tomatoes and chunks of sweet potatoes ) can add courgettes if you like but I hate them things. The veg is lovely and also healthy.

I’d mix some grated cheese with that recipe MissA just to disguise the sweet taste and then burn them a bit as well.
How kind of your elderly neighbour. My nan always gave Apples to her carers from her trees in the garden. It was her way of paying back and they never refused her even though they must have been sick to death of them.

I cut them into circles and roast them in a good covering of oil, but find I have to brown them really well or almost burn them for crispness.

Sweet potatoes (Kumara) were a staple food of the Māori, brought with them to New Zealand.
They must be good for you because the Maori tended to be a tall, strong and healthy people.

I tried mixing ordinary spuds with sweet potato and put it on a shepherd's pie but the GC asked if I'd put sugar in it. It really is very sweet. And sloppy.

You could mix them with ordinary potato as a topping for shepherd's pie - do you think your DGS would notice?

Carrot and sweet potato soup.
Cook with onions, garlic, stock, then blend, serve with a dollop of yoghurt and some fresh coriander if you have it.

I've got a recipe for sweet potato!
Wrap all sweet potatoes up in a paper bag or cardboard container. Take container out to compost bin. Lift compost bin lid up and deposit the container, and sweet potatoes, into the bin. Replace lid. Leave for 12 months. When nicely rotted down, apply to your rose beds.

INSTRUCTIONS
Shred 1 ¾ to 2 cups of sweet potato using a cheese grater or by processing in a food processor (I used the regular blade on my food processor and it worked fine). Start preheating a skillet or frying pan over medium heat. Add the egg to the sweet potato and whisk until combined. Add seasonings to taste (just a dash of each).

Lightly grease the pan by trickling a few drops of oil onto the pan and spreading them around with a spatula—you don’t need a lot. Using a spoon or a quarter cup measure, plop about ¼ cup of the sweet potato mixture into the pan at a time. Mixture will be very loose and may fall apart in the pan—that’s okay. Use your spatula to nudge all the sweet potato scraps into a neat pile and press down on the top with the back of the spatula to flatten. Let cook about 2-3 minutes before flipping. If the patty starts to fall apart when you try to flip it, cook it longer

Just found this.

1 ¾ cups sweet potato shredded (I used about half of a nearly 1-lb. specimen)
1 large egg
salt and pepper to taste
olive oil for greasing the pan
optional seasonings: garlic powder onion powder, smoked paprika, paprika, chili powder, basil, oregano, herbs de provence. I used ½ teaspoon garlic powder and dashes of smoked paprika and chili powder.

Potato fritters.

First time I ever had them was when an American friend served us mashed sweet potato topped with toasted mini marshmallows with turkey at a Thanksgiving dinner!

We prefer them baked or in a lamb curry. Nice mashed half & half with ordinary potatoes as a topping for curried shepherds pie. I’m going to try the soup ideas on here though.
