Things to do with sweet potatoes

It's a long story, but I am overrun with them, and wondering what to make with them.

Any suggestions, please?
P.S I don't like cooking.

Leave skin on, slice into thick wedges, spray with oil and roast on a high heat.

When cool you can freeze them.

Or bake as with a normal potato.

They always come out quite soggy when I roast or bake them.

Is there a knack to getting them at least slightly crispy?

MissAdventure Wed 07-Jul-21 12:08:39

Hmmm, just thought; I always peel them for wedges.
Perhaps the answer is to leave the skin on?

I have never been able to get them crispy, sorry. You could make soup. Add chunks of butternut squash and garlic. Liquidise for a smooth soup. Add coconut milk.

MissAdventure Wed 07-Jul-21 12:11:01

Oh that sounds nice.
I would really enjoy that. smile

Slice them thickly so they stay upright, place skin side down, high heat.

MissAdventure Wed 07-Jul-21 12:12:32

Thanks, riverwalk.
I shall give that a go.

Sorry MissA, I'm no help because I can't bear them. They completely befuddle my taste buds by being a vegetable but they're so sweet and sugary. I'd put them on the compost heap. Or take them to a food bank?

Riverwalk Wed 07-Jul-21 12:12:52

A dusting of flour helps with the crisping.

MissAdventure Wed 07-Jul-21 12:16:21

I know what you mean, Chew.
My boy won't touch them, but I have a weekly bag given to me (by someone who is given them, but can't stand them!)
I don't like to waste them, even though I'm not ecstatic about them either.

Soups, curries etc. I add them to almost anything.

MissAdventure Wed 07-Jul-21 12:19:17

Thanks again riverwalk.
I shall try all your tips.

I made a very good sweetcorn and sweet potato chowder in my ninja foodi last week. You could just as easily make it on the hob, or in a slow cooker.
The ingredients were sweetcorn kernels, 2 sweet potatoes, onion, vegetable stock and milk. I also added a pinch of cayenne pepper and thyme. I didn't add as my salt as I find stick cubes salty enough.

I can never get them to go crispy either. I m not keen on the taste but hate waste and my niece gave me a bag of frozen ones . We added them to a vegetable curry. Texture was fine and curry hid the flavour

MissAdventure Wed 07-Jul-21 12:34:24

If I don't sort out things to do with the things there will be a headline - 'Woman found buried beneath 2 tonnes of potatoes' soon.

Riverwalk Wed 07-Jul-21 12:36:55

Why don't you just politely decline - after all the person who is giving also doesn't like them!

MissAdventure Wed 07-Jul-21 12:39:46

I've tried that, but she gets offended, as does the person who buys them for her.
It's a bag a week.
In the winter I mash them with stew, but now I'm at a loss.
She still makes me take them even if I decline, and says I can find someone to give them to.

Callistemon Wed 07-Jul-21 12:41:16

Where's my long and helpful post?

MissAdventure Wed 07-Jul-21 12:42:50

It's not here.
Is it elsewhere?

Eviebeanz Wed 07-Jul-21 12:44:14

Although I'm not keen on them I do use them sometimes just for variety. Usually add them to spicy pork casserole.

MayBee70 Wed 07-Jul-21 12:45:46

I really like them mashed with carrot.

MissAdventure Wed 07-Jul-21 12:48:17

Does anyone actually like them? grin
I have them mashed up with carrots, too.

Callistemon Wed 07-Jul-21 12:50:45

I'll try to remember and precis it:

Riverwalk is that why pub sweet potato chips are nice and crispy but even the frozen ones cooked at home are soggy?

Spicy soup with coconut milk
Freeze some
Saves cooking next time

Otherwise, MissAdventure, pass the parcel, when the music stops someone gets landed with a bag of sweet potatoes.

Chop them up small best to roast them first to firm up. Then add to chilli cottage pie ragu curry soup or stews. Bake them in the oven and fill them with your favourite fillings. You can roast them and add them to chick peas to make houmous.
Grate them add them to grated potato other veg and herbs put into tea towel to squeeze off excess water. Add flour baking powder egg and seasoning fry in a little oil finish off in then oven there you have latkes.
I just made a batch with herbs and greens from my veg patch.
