What's for lunch and dinner today?

It's 09.30 and my thoughts are turning to lunch.

Jazz dance class later so will have my usual smoked salmon and scrambled eggs - something light to keep me light on my toes!

No idea about tonight... maybe salad, something from the freezer, odds & sods from fridge, who knows smile

In the move today, part way home from holiday
Chicken sandwich for lunch .
Quick dinner later, Salmon fillets, broccoli, sugar snap peas and a few new potatoes. Fruit & yogurt.

I try to forget about lunch but if I am hungry a bowl of cereal. Tonight, the same as last night- salad with a selection of bought cooked fish- yummy with 2 glasses of wine.

Early lunch today before dance classes: ham sandwich, yogurt and fresh strawberries.
Dinner at the pub after our evening health walk, probably a small carvery.

That's all you need Lucca. Starchy carbs are the main enemy as it's so easy to eat too much - so be mindful of how much bread, rice, potatoes, and pasta you eat.

Lucca - I’m long overdue a blood test. I was prediabetic several years ago. Covid etc seems to have stopped the follow ups and I haven’t asked simply because I’ve enough on my plate.
There are some excellent cook books yiu could get on line - just Google cook books for diabetics - you’ll find loads. Yiu could just Google recipes, again endless on line.
The key is reducing portion size of carbs. I’m a carb lover.

Sorry to hear that lucca ,look on line there are some great recipes for diabetics my friend had just been diagnosed she was told just to be careful with carbs but otherwise everything in moderation.

Well it looks like I have diabetes now to add to my cancer …so any dietary advice is welcome. Very hard as I’m not a huge fan of vegetables…..

Elizabeth I do wish that I didn’t eat lunch, then I may lose some weight.
I only had a cheese sandwich today though as I was very busy.
Tonight we will have pre cooked chicken with stir fried vegetables and noodles.Fresh peaches for dessert.

Traditional English salad with spring onions, boiled eggs, baby potatoes, accompanied by ham sliced off the bone plus a fresh sliced farmhouse loaf with butter and of course lashings of mayonnaise delicious ?!
Maybe strawberries, mini meringues and LongleyFarm cream for pud.

Gourmet lunch here. I’ve just eaten a packet of chicken ‘flavoured’ (ha!) ‘SupaNoodles’. Yummy. Decided to up the healthy aspect so followed it with a pink lady apple.

No lunch today as woke up very late and not long had breakfast - two small scotch pancakes. For tea I think I’ll have twice cooked jacket potatoes, one microwaved large potato with insides scooped out then grated cheese, chopped ham and onions mixed in before refilling the skins and popping in air fryer for a few minutes. I’ve got a few bits of salad left but I’ve not looked at them for a few days so if they are too far gone, it will be the potatoes on their own!

I’m not a fan of salad apart from tomatoes so after a couple of meals it tends to get left in the fridge! But I find using my air fryer rather than my oven has been a boon during this heatwave so I might have chicken and jacket potatoes tomorrow.

I am unable to go food shopping due to very painful arthritis in my knees so rely on Tesco deliveries every ten days which limits my fresh food supplies, my fridge is a bit empty now until Friday!

Have just eaten toast spread with butter, Philadelphia with herbs, and a smear of marmalade.

Main meal is to be bacon chops with new potatoes baked alongside them, accompanied by home made tomato pasta sauce, baby carrots and dwarf beans.

Followed by Greek yogurt.

We are on the move so quick sandwich and yogurt for lunch.
Overnight stop with caravan tonight so bakery Cornish pasty and baked beans this evening with fruit for after.

We went out for breakfast, so no lunch today but dinner will be cold left over chicken, salad & sweet potato fries. Dessert, Eton mess & probably a Solero ice lolly watching a bit of TV when we’ve come in from the garden. Loving no cooking. smile

I don't eat lunch, no nothing.

I continue to follow my mother's resolve not to go anywhere near a cooker in hot weather, so the next few days will all be salad suppers accompanied by ham/tuna/sardines/tinned salmon.

Greek yoghurt with berries from the garden and Greek pine nut honey for lunch. Duck and vegetable noodle stir fry with whatever sauce I make for tea.
