I’d leave out the fennel seeds too, because a) I’d have to go and buy some, and b) because fennel is the one and only vegetable I really dislike, so if they taste anything like that….

Have you tried fennel roasted? You have to blanch it first then bake in some olive oil with parmesan sprinkled over it.

I love anything pasta, so maybe it just wasn't to your taste

Jamie Italia in Cambridge used to have a poor reputation as well. We preferred the nearby family run Italian restaurant which I believe had to close after lockdown.

We had a similar experience at a Jamie's Italian in Aberdeen once. Have never gone to any of his restaurants since.

Probably the worst Italian meal I ever had was in Jamie’s in Oxford,Genaro Contaldo was in charge of the kitchen and we weren’t impressed .The food was over cooked,stuck to the dishes maybe due to the fact it took a LONG time to arrive,We did complain,didn’t eat it and were told everyone else in the restaurant was happy and basically we could “do one”.A written complaint didn’t even get a reply.I haven,t given Mr Oliver air time in my house since .I always recommend finding a family run Italian restaurant for the best of service and food

I didn't see that episode but there is an Italian recipe for a pasta sauce made with sausages.

Poor Jamie his shed leaks as apparently does his house now. He is one of our favourite Chef's and we love his recipes.

I'm amazed at how quick he is. The meals he makes in a short programme would take me all day!

Last year DH grew pumpkins for the first time, goosebumps was the variety. At Christmas I made Jamie Oliver's giant stuffed squash with cheesy leeks and served it as a side dish with the turkey. We had friends over and it was a hit with us all.
I use quite a lot of his recipes, usually halved as there's only 2 of us.

I'm not blaming JO. It was a vague attempt to be lighthearted.
A lot of his ideas are great.

I think you can cut back to some extent and amplify other cheaper ingredients but you don't always end up with a pleasing result. Perhaps better to stick to things which have stood the test of time like hearty stews and soups.
