Curds and whey

Hello, just had a disaster. My large fridge freezer has died on me. On my own, I couldn't believe the time it has taken me to dispose of all the spoiled food.

As I was cleaning out spoiled milk, I had a thought......Just why exactly was Little Miss Muffet eating her curds and whey. It is absolutely disgusting.

My second thought was .... Why do I have such a huge fridge freezer, when there is only me.
Answers on a postcard please 🥴

And I have discovered that I really do need to label items for the freezer. I always think 'oh I will remember what that is'. Err, no I don't. So many miscellaneous bags, with dear knows what in them.

Yes, and it isn't an age thing, I have always labelled containers in the freezer for just that reason.

I do have far too much in my freezer, and my pantry. I am trying to cut down.
My DGS used to come for his tea, so a pile of various things, and veg alternatives for his friend. But he is old enough to go straight home now <sob>, so I emptied the junk food part into his parent's freezer, and gave his friend's mother a nice surprise with a load of veg sausages, burgers and lasagna.
But in tidying, I found some things I did not even know were there, so lunch for the next few weeks, is going to be different <lol>

Junket won’t be the same as it needs to be made from unpasteurised very creamy milk.

Rennet can still be purchased though. I think Waitrose sell it.

I might just try that.. Fond memories. Tesco have full cream Jersey on offer at the moment....

Have always disliked milk, when we had it at school it was always luke warm and made me feel sick, eventually my mum had to send a letter saying I couldn’t drink the milk due to a stomach problem.
Curds and whey or junket sounds awful to me but am sure is delicious if you like that kind of thing.

I remember my mother making fruit flavoured junket using a few drops from a little bottle of flavoured rennet added to fresh, full cream milk. I seem to remember I quite liked it.

Little Miss Muffet lived in much harder times than now with no supermarkets and on demand Uber deliveries or Universal Credit.

And people were so poor, nothing was wasted.

Looked up Junket. Sounds awful, a bit like re engineered low fat cottage cheese.

The Spider in the rhyme, probably just liked dipping its newly caught flies in the curds and whey. Brought out the flavour really well.

As for your freezer. I have real walking difficulties, painful artthritis and cannot carry much.n
So when l do go food shopping with the help of local disabled transport.
I have two freezers.

About once a fortnight. l can buy enough food to last. Yo can freeze bread and milk. Not wonderful but OK.

So do keep your large freezer My Dear.

My husband is so proud to come from Brookman's Park in Hertfordshire, where there is a Moffat's Lane. In the dim and distant past, there was a real Mr Moffat who was an entomologist with an interest in spiders.

I can still remember the picture in my nursery rhyme book and Miss Muffet was sitting on a tussock! Perhaps it’s derived from that!

Junket is delicious and so quick and easy to make I have it slightly warm, with a little grated nutmeg and a splash of cream.
There used to be a product to make flavoured junkets called Miss Muffet

YOu can use curds to make cream cheese, wey is only really of any use if you are baking bread or rolls, or feeding pigs!

Miss Muffet belonged to a time when children did eat sour milk - food being too expensive to throw out. Today we eat yohurt, which I found disgusting when it came into fashion, but have become accustomed to.

Tastes change and are, of course, highly individual.

I’m just thankful that I was never expected to eat either curds and whey, or junket! School milk was quite bad enough.

If you are using sour milk to make any sort of cheese you need to use unpasteurised milk which will contain natural bacteria. Pasteurised milk is free from bacteria and may pick up dangerous bacteria from the air.

Yes makes sense Elrel and it was definitely what my mum called the little patchwork leather thing that I used to sit on as a child int’ 60s😍
And I still don’t like spiders …

The only time I ever had it, the farmer brought the milk in straight from the cow, all warm and foaming.

What his wife then did to it I don’t know but it really was lovely 😊

This I remember has a kid ,a Uncle of mine worked on a local farm in Brackley and he used to bring home the curds and whey , which was given as a sweet with dinner if we had it at nans house.

I think curds and whey was an old name for junket.

I’ve only had junket once - made with milk still warm from the cow. It was very nice.

I used to love junket when I was a child, I haven’t seen it for years.
