How was your Christmas cake?

I didn’t even get around to icing mine, let alone sampling it. I used James Martin’s recipe which I tried last year and it was delicious. We’ll get around to it eventually I’m sure. With all the alcohol that’s in it, it should keep!

We did get to ours yesterday, as I’ve been feeling poorly and not wanted food it was the only thing I ate and very nice it was too, moist and tasty. I used Mr C’s Aunt’s recipe, very traditional and keeps well.

Our was very nice. Just marzipanned and iced the top.
We had two slices each yesterday!

I made a salted caramel cheesecake for Christmas Day, which was a lovely treat.

We had a small slice each yesterday. Lovely and moist but I didn't use marzipan as DH can't stand it and I really missed it.
Icing on it's own is not the same.

Next year I think I will cover half with marzipan and icing and half with just icing.

I too use Delia's Creole recipe.
Used it for years as my family don't like the icing etc.
Mine was cracked yesterday after spending over a year in the garage, as I made it last year no one bothered about cake so I left it.
It was perfect.

I cut into ours yesterday and it was lovely and nicely moist. My neighbour was very complimentary. I always use the Delia recipe with lots of extra booze fed in over the preceding weeks.

I tried Jamie Oliver’s recipe for the first time after years of doing a Delia, and it was, although I say so myself, excellent!

I just love Royal icing, the vegan version, using aquafaba instead of egg whites!

I bought a fruitcake - and a big box of marzipan fruits to go with it - and very nice too. I'm gradually eating my way through it all. I can't stand that fondant icing, horrible stuff!

This is the ‘Christmas Cake’ we had this year: a delicious Kransekake made by my son. It’s a family favourite and reminds us of a very special Christmas we all spent in Norway a few years ago.

Mine is still wrapped up as I still have mince pies and Christmas pud to finish, as well as a mountain of cheese, fresh fruit, cold meats. And then the chocolates. I stopped icing and marzipan a few years back as no-one really seems to like it. So I still dont know how it has turned out this year, a bit on the dry side or very moist.

Everyone was pleased eating the rich plum cake i baked for Christmas with a glass of wine. I tried a recipe online and cake turned out well.

Mine is gorgeous this year, though I say it myself as shouldn’t. ? I use Delia’s Creole recipe and it’s so good. Different every year because I vary the type of copious booze in the recipe - this year’s is heavy on the Amaretto and port and all the better for it.

Sadly only DD1 and I like Christmas cake, but we have guests coming on NYE who might appreciate a slice or two.

We started ours on Boxing Day. I made it, I’ve never bought a Christmas cake, but I did stop making the Christmas pudding a few years ago. The cake is moist, but delicious. I think I put too much Brandy in it.

We were pleased with ours- marzipan and icing

Mine was delicious. I make Delia’s using dark rum instead of brandy. I feed it every few weeks with more rum. I covered it with a thick layer of marzipan, thick layer of fondant icing and decorated it with royal icing. Yummy.

Not started on ours yet. Maybe tomorrow or we often keep it until New Years Eve.

I've made Christmas cake(s) for more years than I care to remember but, feeling a bit under par this year, I bought one.
It's ok, DH liked it but I really dislike that rollout icing.

My cake this year was drier than usual..
DH who is in charge of the weekly ‘ feeding’ with brandy slipped up on the job.

We didn't have one. DD made a black chocolate and black cherries 'black forest' Yule Log with brandy cream.

Mine was made from a 1930’s BeRo recipe, but I made it with dark brown sugar instead of light, because that was what I had, and I also used up the remains of an out-of-date tin of black treacle, not in recipe. Put blanched almonds on top, no marzipan or icing so more of a Dundee cake.

Tried a slice at teatime, quite nice, bit dry, would have liked it to be moister.

My Tesco cake was delicious, moist, fruity with nuts and a thin layer of icing - only cost £4.00.

Ours is lovey as usual. Old family recipe. Lots of fruit, no booze. Thin layer of marzipan, thick layer of royal icing.

Haven't touched ours yet - not even iced ☹️ Mr A (cake maker and icer) became very sick Christmas afternoon and wasn't very well Boxing Day. So Boxing Day meals were very small and light and nothing sweet. Banana on toast anyone? Scrambled egg on toast anyone? We've still got mince pies and Christmas pudding to get through so will probably have the cake at about Easter ?
