Thougth I would start a new thread and invite any others who have a good recipe for us dieters
Mine is a Good Housekeeping one
SALMON FILLETS WITH SALSA FRESCA
SERVES 6 .PREP TIME 20 MINS PLUS MARINATING. COOKING TIME 10 MINS
236 CALS PER SERVING
1 large garlic clove crushed
finely grated rind of 1 lemon
1 tbsp lemon juice
1/4 pt natural yogurt
1 tbsp sun-dried tomato paste
6 salmon fillets about 11/2 lb
lime slices to serve
salsa fresca
1 large green chilli seeded and finely chopped
6 oz cucumber finely diced
finely grated rind and juice of 1 lime
2 spring onions
12 oz cherry tomatoes roughly chopped
1 tsp sugar
salt and pepper
small handful of fresh mint
1. mix together the garlic lemon rind and juice and tomato paste stir in yogurt
2. coat salmon with yogurt marinade chill for 3 hours
combine all salsa ingrdients except the mint eason well chill up to 2 hours
3.preheat grill high bake salmon 10 minsuntil flesh flakes easily
4. chop mint and stir into selsa serve with lemon garnished with lime slices.
I fiddle around with the amount of salsa ingredients so that it makes a substantial amount so that I don't need to add eny other veg etc.
