This is a thread to provide support for those who are on LCHF diets and in maintenance mode.
We can exchange recipes and ideas and encourage each other when the going gets tough!

There is some nice stuff in Plenty More and DD did a lovely red Thai soup for me, but it seems to be just the odd recipe that I really want to do. He always seems to go a couple of ingredients too far imo and it doesn't help that there is quite a lot of stuff we can't get here.
The potato crop will last us most of the year (stored in the cellar out of the reach of mice) but we may cut it down again next year.

I was thinking of getting the books mamie. Would you say they weren't worth bothering with, then?

I deliberately didn't plant any potatoes this year, we just don't bother very often now that DS isn't at home as much. If he comes back after Uni, I can always start up again. DBH is more than happy to join in on this diet, apart from the odd sausage butty!

I have got Plenty and Plenty More. I think they are turning into books where I say regularly, "I really must cook something from that...." Not sure why.
Yesterday we had roast duck and cabbage tossed in lemon oil with a couple of new potatoes. Agreed that potatoes don't really do it for us any more (although we have planted four beds of them). hmm

Basically, peas with sorrel and spring onions, but in a mustard and greek yoghourt sauce. It was really nice, I omitted the sugar. I grow quite a lot of sorrel, but you could use spinach and add lemon juice instead.

I've had a few lapses too Anya due to lack of planning but new week, new beginning!

In my new slow-cooker I've put frozen meatballs, green & yellow pepper, tinned chopped tomatoes, tomato puree, red onions & garlic, spices & seasoning. All in one method, no saute-ing.

Will serve with roasted celeriac.

We were out all yesterday afternoon so I left a beef casserole in the slow cooker as I knew we'd all be hungry when we got back. I do miss the days of just shoving some sausages and chips in the oven though.

DH always offers to do the veg prep now which is good because there's usually a lot of it. I bet he doesn't miss peeling potatoes!

Fallen off the wagon recently. Nothing to do with the diet/eating plan, because that is so easy to follow.

No, it's just that I'very got lazy about planning ahead. Nothing planned for lunches in particular and to a lesser extent for dinner, though I can usually cobble something together. But that's not really good enough.

So today I'm going to make time and plan a week's menus in advance. It won't be set in stone but eating on this, or any other 'diet' does need planning IMO.

Well - that's nice too!

I had burger with melted cheese on salad with avocado pear. It was very filling. Stewed rhubarb and cream later if I can find a space in my tummy.

Do you have a double-bladed hachoir/mezzaluna? I use that if just chopping enough for me.

I might try that, Mamie. DH is out fishing all day so I usually put something in the slow cooker as I'm never sure what time we're going to eat. I can marinate the chicken thighs for a couple of hours and I have some borlotti beans in the freezer as well

Lunch today is a sort of mini Nicoise, with salad leaves, hard-boiled eggs and a small tin of tuna mashed in mayo. For dinner, I am doing a casserole of chicken with sage, tomatoes, borlotti beans (frozen from our garden) and butternut squash. You marinade the chicken overnight in oil, vinegar and herbs and roast the squash before adding it at the end. Haven't tried it before!

I was thinking that, I shall buy a load of them I think. I was saying to a friend tonight, they have to be the healthiest fastest ready-meal ingredient I have ever come across. I might try them out on the GCs and tell them they have rubber bands for tea. I could colour them first. grin

I have just eaten the weirdest noodles. I have to go out early tonight, so decided to have prawns, garlic, red chilli and rocket on noodles and cook enough for some now, the rest a bit later. My sister gave me a pack suitable for coeliacs with no starch in them, and only 6 or 7 calories per 100 gms. They are called Slim Noodles, and are made from a vegetable fibre called Moyu.

Well, at first, my teeth literally bounced off them, and I was thinking, this is just like eating thin rubber bands without the horrible taste. As prawns are a bit bouncy too, that didn't help much. But by half way through I was used to it and quite liked them.

I see now why she gave me some, if you buy 16 packets they are cheaper.

I do something like that! With mushrooms too. In ramekins.

I was feeling very envious for a moment there, anya.

I had fresh pineapple and cream this morning, it felt very decadent. It wasn't though - DBH bought two for £1.50 from the market, very ripe so just had to be eaten up.

Possible breakfast idea.

Line muffin tin with parma ham. Drop in an egg
Top with a spoonful of cream and grate parmasan on top. Fresh ground black pepper.

Think my scales are knackered. Had them 20+ years so they don't owe me anything.

I'm very boring breakfast-wise. Usually blueberries and raspberries with double cream - quick and easy.

Ha Ha, Anya. My scales give an incredible result if I'm not wearing my specs!!

Breakfast ideas anyone? I'm now eating a slice of Ryvita with a boiled egg which is yummy and a nice change from scrambled eggs which DH adores and would eat every day if I let him hmm

We have blueberries in Greek yoghurt some mornings and bacon, mushrooms and tomatoes on Sunday mornings.

Tonight we're having Thai fish curry with cauli rice.
