Low-carb support thread 2016 Part 2

The thread is intended to support people who are already on the diet or want to start losing weight / gaining health benefits by low-carbing.
Here is a simple explanation of this way of eating and how it works.

You do not have to count calories, weigh anything, exercise furiously or feel hungry.
You do have to cut out sugar and sugar-substitutes and avoid starchy foods like potatoes, bread, rice and pasta.
You need to eat lots of vegetables (especially those grown above ground) and protein which can be cheese, eggs, meat, fish etc. You can eat olive oil, butter and other natural fats. You can eat limited amounts of fruit, dark chocolate and some alcoholic drinks in moderation.
You need to avoid anything labelled low-fat and most processed food and drink.

Welcome, Singlegrannie. If you follow this regime you could well reverse your Type 2 diabetes. I am a rather weak-willed follower with a healthy blood glucose, therefore I lack the incentive to follow it strictly, but I try! If you haven't done so already I recommend having a look at:

It would be wonderful to reverse the type 2 Have been cutting sugar as far as possible for years having the occasional lapse, but have recently decided that it's not enough, carbs must be reduced too. If I reduce too much I find I develop a sick headache so have to be careful. Today I have had scrambled egg with 2 small slices of buttered wholemeal toast and have just had a lunch of tuna mayo with avocado. Am now going to have some plain full fat Greek yogurt. Probably chicken salad later.
I will have a look at the website. Have recently bought the Blood Sugar recipe book and am looking forward to trying some recipes.

Welcome Singlegrannie.
For lunch today we had a mushroom and parsley omelette.
OH is cooking tonight's dinner at the moment, oxtail casserole with peppers, tomatoes, spices and borlotti beans. It will cook very slowly for most of the afternoon.
The beans are not very low carb, but might be helpful if you need to include them if you don't want to reduce too much.

Yes, I think a few pulses with a meal is a good idea. Oxtail is a favourite I haven't cooked for years, couldn't get it for ages after the BSE scare. Must get some!

* singlegrannie* welcome. Do stick with LCHF. I have reversed my T2 . BS was 7.6 , now 5.5 after 8 month. The doctor was delighted. Good luck, you can do it sunshine

Today we are having cod steaks with chorizo, red pepper and cherry tomato sauce and cauliflower Parmesan mash.
Tomorrow will be pot-roasted guinea fowl with vegetables.

Oh dear I feel very inadequate Mamie but I need to use up some of our eggs (those chucks will keep laying them) and some rather ancient rashers of bacon that look smell OK. Just adding mushrooms, tomatoes and sweet potato chips for some of my 5+ a day.

I have made some curried beetroot soup for lunch tomorrow, if that redeems me? It's had some strange looks from my 'guest' though hmm

We are having to buy eggs as our neighbours chickens seem to be on strike!
We have been to an apple fair today and stopped off in the local market; such is life in rural France. grin

We are having Moroccan shrimp this evening. I am using langoustine tails and prawns instead. It is a very simple recipe. Just fry the seafood in olive oil with garlic, cumin, ginger, paprika and a pinch of cayenne. I have even added scallops. It takes moments to cook and we usually have it with a mixed salad.
Tomorrow it is smoked haddock and poached eggs for breakfast, and I am going to make cauliflower soup during a break from packing.

Have 2 year old granddaughter (sorry, still can't get hang of all the abbreviations everyone seems to know except me) with me today. Was sooooooo tempted by her leftover toast . was strong and put it in the bin,but still kferp thinking about toast !!

No, and I know its not no carb its low carb. However Idid resist this time as I like to plan the carbs I do have. I had a coffee with cream which helped and I feel less hungry now. Granddaughter is having salmon with salad and sweet potato now, will put her down for her nap soon and eat mine in peace I hope. !

Well done singlegrannie - that's the reason so many fail to lose weight, isn't it? Giving in to a craving. Just say no and move on or better still think 'I will not be dictated to by a piece of toast!' grin

After reading about your oxtail casserole I bought some myself and cooked it in the slow cooker with loads of veg and what I thought was a small amount of badly and lentils. I will put an even smaller amount in next time !
It was delicious though, so thanks for the idea. I have several portions to freeze too ☺

Just been googling "resistant starch" .Sounds interesting , anyone include it in their diet?
Most of the bread I have eaten for years has been frozen, and being on my own I have often cooled and reheated potatoes. Wonder if frozen chips would be OK !!!

Beautiful John Dory at the market today. Will be pan-fried in butter with salad, tartare and a couple of new potatoes cooked in olive oil in the oven.
Followed by a couple of figs from our brave little tree. grin

No there aren't but France is still not big on convenience food (though you can get frozen chips!).
We have a big vegetable garden and we both love cooking and eating so that is how we spend a lot of our time. Rural France would be very boring without it, I think.

I have just made the Pear and Brazil nut Brownies from the Blood Sugar recipes on this site. They are absolutely yummy. When you haven't had anything resembling a cake for 8 months they were like manna from heaven
