I'm also a great fan of cooking a bit more for dinner and having the leftovers warmed up for lunch the following day. Sometimes stews and casseroles and hit pots actually taste better the next day too!
There's the added advantage of not having t think about what to eat, and not having to cook it
My French friends are very clever with leftovers.
