The thread is intended to support people who are already on the diet or want to start losing weight / gaining health benefits by low-carbing.
Here is a simple explanation of this way of eating and how it works.

You do not have to count calories, weigh anything, exercise furiously or feel hungry.
You do have to cut out sugar and sugar-substitutes and avoid starchy foods like potatoes, bread, rice and pasta.
You need to eat lots of vegetables (especially those grown above ground) and protein which can be cheese, eggs, meat, fish etc. You can eat olive oil, butter and other natural fats. You can eat limited amounts of fruit, dark chocolate and some alcoholic drinks in moderation.
You need to avoid anything labelled low-fat and most processed food and drink.

Experiment. ? There is a Hairy Bikers one but I will adapt our usual one. Smoked haddock, onion, spices, mushrooms, peas then cauliflower rice added at the end with a bit of liquid and hard-boiled eggs.
That sounds good Mamie - have you made it before or is this an experimental run?
I am making kedgeree with cauliflower rice. Our own winter cauliflowers are almost ready.

BB I'll try to be prepared next time with a little white lie, such as 'I've eaten enough tonight but I'm going to put some of that aside for tomorrow with a nice cup of coffee in the morning.'

Sorry you had that reaction to a lovely rhubarb tart. I had the same reaction to a piece of cheesecake that had been made ' specially' foe me. !
I think a lot of people think that Anya because of farmed veal, which we wouldn't eat either. The veal we get here is reared outside in the fields "sous maman" and no different from eating lamb. It is a much pinker meat with delicious fat.
Been ill all night. Had BBQ and invited neighbours. One brought a huge rhubarb pie as her offereing and I felt pressured (in a 'don't hurt her feelings' sort of way) to have a slice. It brought on the most horrendous reflux, something I haven't had since starting low carb.
Good going BB - just wondering I might be tempted not to mention LCHF to GP until you suss her out???
Never had veal Mamie just can't bring myself to eat it.
Sounds great BB. Glad you are settling in happily. Seed trays and little plants going very well here in potting-shed and greenhouse. It has been 26° here today and we had fabulous barbecued veal chops with asparagus. ?
Hi everyone. We have been a month in our new house now. Indoors practically sorted. We have started on the garden and have planted broad beans and spinach so far. We have also planted three pots of globe artichokes in the green house. We have space for them now.
We have managed to eat LCHF during all this time and DH and I have not put on any weight. Due to see a new Doctor on Tuesday. I wonder what her reaction to LCHF will be?

We both cook and OH is always trying new things, but as I have said before there is very little else to do in rural France apart from cooking and gardening. ? It is ravishingly lovely at the moment though, blossom as far as the eye can see, primroses, cowslips and the first wild orchids. I went out for a group walk the other day and we walked on the roads for an hour and saw one car.
Glad the brownies were good, I did them for book club and they went down very well.

Question from a newbie, please! I presume the headache I've had all day is a carb withdrawal symptom.....any advice on how long it takes your body to adjust to low carb?

I'm afraid Lazigirl my cooking is much more basic and less ambitious than Mamie's
? Lazigirl. Round here you have to serve pork / chicken / veal in cider and cream followed by camembert and tarte aux pommes. The things we cook would be far too "forrin". Might you the inhabitants of our hamlet often tell us that they enjoyed the smell from the barbecue.
OMG Mamie Why don't you two open a restaurant with your delicious food? Sounds really scrummy. Perhaps Anya could help too? No barbies here - raining in Shrops.
Brilliant Craftycat. Well done you. ? You can actually have very dark chocolate. I make a mouse with just dark chocolate, eggs and cream. It is fabulous, very rich though, I do one egg, 30g of chocolate and a dessertspoon of thick cream per person.
Tonight we are trying something new with a breast of lamb from the bottom of the freezer. OH simmered it for an hour in water to take off the fat, then cooled it, dried it and put it in a spice rub. We will barbecue it later. I am making a broccoli, avocado and red pepper salad to go with it. To be followed by a smelly blue cheese or two. ?
I've lost a stone!! It seems to have taken a long time but that is the first one out of the way. Ideally I'd like to lose 2 more.
I can't say it has been difficult apart from the craving for toast & chocolate. I got over the toast by having my marmite in cottage cheese for breakfast instead. I confess to 2 chocolate digestives - both times when I was at a friend's house & everyone else was having one!
DH has actually started to enjoy salad & other 'green things' for the first time in his life- he still won't even consider broccoli or cucumber but I can live with that.
It is more work as I never used to give him breakfast or lunch as he got it at work but now & I have to make it the night before for him to take in so he can avoid the staff restaurant.
Now I'm into it I find I can make extra portions of most meals & freeze them to save cooking if I am out all day.
I wish I had discovered this way of eating a long time ago. The saving grace is I can still have a glass or 2 of wine & the odd G&T! Only at weekends now though.

Fruit, particularly tropical is full of natural sugars in the form of fructose, but it's all the same when it is digested, and apart from the vitamins and fibre you get from fruit, you may as well eat spoonfuls of sugar! Same thing with bread, potatoes, rice etc., they convert to glucose in bloodstream. As Anya says, berries are best (with full fat cream, yummy), but other fruit should be restricted on low carb eating.
Thanks very much for your helpful posts, Lazigirl and Anja. I agree planning your meals in advance seems to be the way to go. Was fine today so far and have just finished my dinner of salmon and loads of green veg. Why only one piece of fruit i.e. handful of berries, a day, Anja - I love fruit!
