Low-carb support thread 2016 Part 2

The thread is intended to support people who are already on the diet or want to start losing weight / gaining health benefits by low-carbing.
Here is a simple explanation of this way of eating and how it works.

You do not have to count calories, weigh anything, exercise furiously or feel hungry.
You do have to cut out sugar and sugar-substitutes and avoid starchy foods like potatoes, bread, rice and pasta.
You need to eat lots of vegetables (especially those grown above ground) and protein which can be cheese, eggs, meat, fish etc. You can eat olive oil, butter and other natural fats. You can eat limited amounts of fruit, dark chocolate and some alcoholic drinks in moderation.
You need to avoid anything labelled low-fat and most processed food and drink.

I was in Ireland at the beginning of August visiting my brother and he was doing the diet says he has lost Two stone. My sister-in-law doesn't know it's a diet she just thinks he's given up bread and potatoe she would be trying to feed him up. I think I have lost weight I don't have a scales but my clothes are definitely looser thanks for your support I am back doing because I was able to go to you. I will not eat the bun or the chips any more I will get two burgers and just eat the meat.

Just signing in quickly to this lovely thread to say I'll be taking a break from GN. TBH I've had enough of certain people and feel a break would do me good.

My step-sister has come down on an extended visit and that will be wonderful to catch up with her and it will also help distract from recent health problems. She is very interested in the low carb diet, not that she needs to lose any weight, but she's a great advocate of being in charge of your own lifestyle.

I'm only posting here as this has been such a supportive thread and I didn't want you all to think I'd just given up on it. I'll probably be back later in the year and wish you all the best smile

Where is everyone since Anya took a break, am missing you all and your delicious recipes?
Tonight we're having a nice meal of mediterranean fish soup. Tomato base with white wine, fennel, chilli and chunks of fish and prawns. Am not a domestic goddess but this is really easy and friends like it.

If anyone is watching this thread & wondering whether to give it a go it has
made such a difference to me. After the shock of finding out I was pre diabetic I wanted to do something about it, and this thread has been so helpful and supportive. I now always plan meals in advance, and we eat a much more varied and interesting diet than before. I continue to have porridge for breakfast, and crispbread at lunchtimes, but main meals mainly very low carb. We eat more leafy veg & I have substituted water for fruit juice I used to drink, but I do like a beer at the weekends, and I am down to a weight that is right for me, and my arthritic hips and knees feel better. It took me at least 6 months to get to target weight, but this way of eating is now a way of life which I intend to maintain.

So glad it is working Lazigirl. Still enjoying the odd barbecue here, but moving towards winter diet. On Sunday we had bought a duck (well within date) which smelt horrible when I took it out of the packet. Had to do a quick substitute of chicken legs, roasted and then a sauce of vermouth and cream served with cauliflower gratin. Was quite pleased with that.
Off to the UK this week to stock up on spices, horseradish and brinjal chutney!

It is really cold here today. We will have to start thinking about LCHF winter recipes soon. Anyone got anything really interesting in mind. Both DH and I love this way of eating,

It is 22° and sunny here, but we are having a winter favourite. Lamb shanks in a casserole with tomatoes, carrot, onion, garlic, celery, herbs, tomato puree and haricot beans. The beans aren't very low carb, so you could do it without the beans and have cauliflower mash as a side dish. It should have a gremolata of parsley, lemon zest and chopped garlic on top, but raw garlic gives me indigestion and the parsley has died. I think I will put a bit of lemon zest in at the end. It cooks for about three hours in a low oven; I use a jar of beans.

Had a great meal out at Wagamama for GD2’s birthday last night. Swapped the sticky rice for veg stir fry and it was a really good low-carb treat.
