Diabetic friendly desserts

Biscuits/crackers are not good for diabetics. Too many carbs.
My favourite is berries set in sugar free jelly served with whipped cream

I make the dark chocolate mousse, but with eggs. Melt chocolate, add to beaten yolks, then add beaten whites. No sugar needed. I sometimes add cream as well and a bit of brandy is nice.

Yes surprise us was unhelpful and I said so. They said it is just lovely to turn up not having "dictated" the menu and they trust me to do something "sensible"!! I am actually having some fun researching! Great suggestions made on here

Diabetic Chocolate mousse
50 grams dark chocolate (darker the chocolate less sugar)
200 ml double cream
Melt chocolate micro or over pan of water
Whip cream separate bowl don’t over whip
pour in chocolate to combine properly.
Put in bowls glasses etc grate on chocolate or other toppings nuts fruit etc.
fridge til required 2 serving increase quantities for more people.

I have a bit of a plan now with a lovely sounding strawberry mousse made with frozen strawberries and ricotta! Fingers crossed ?

Mad gram 77, your post set me thinking; what would I serve? No immediate answers but it might be worth asking your friend what she would regard as a treat. I have a diabetic friend who is ok with some dark chocolate provided she has it after a meal for example. Good luck and enjoy your friend's visit.

I did look at google but seemed to get lots of cakes rather than desserts. Thanks for suggestions above. Will keep looking as well as would like to offer a choice of two desserts if possible,

I agree with the above. Berries and cream/yoghurt with maybe a few chopped nuts as sprinkles.

Or uou can use double cream with that, no sugar but high in fat and tastes lovely!

I have visitors coming in a couple of weeks, one of whom is diabetic. Any suggestions for tasty, special "treat" dessert recipes that are diabetic friendly would be gratefully received please! smile
