What factors determine the taste of olive oil?

I have been interested in cooking since childhood. Now I am more actively studying and trying to use different oils for dishes. I really liked olive oil because it has a lot of vitamins. However, I wonder what factors determine the taste of olive oil?

There are several determining factors olive oil flavor. Each olive oil has its own unique taste characteristics depending on the type of olives from which it is obtained, the time of olive harvesting, the method of processing olives and many other factors. The main thing is to choose extra virgin olive oil, because this oil is very useful for the body.

I use cold pressed rapeseed oil for all my cooking, roasting etc. Nice nutty flavour, good balance of omega and fatty acid, plus Vit E and K. It has half the saturated fat of olive oil, and ten times less than coconut oil. Plus it's grown and processed in the UK, cheaper than olive oil, and it supports our farmers. All a plus for me.

I have switched to rapeseed oil, olive oil far too expensive now. Use it for some frying/roasting and dressings.
