Elderflower Cordial

hello all
Now is the time to gather all those lovely free Elderflowers to make cordial
This recipe has been passed on to me by a friend :
NOTE
PLEASE MAKE SURE THAT YOU CORRECTLY IDENTIFY THE ELDER TREE BEFORE YOU COLLECT FLOWERS
I wiil try and post a picture
cordial
15 large flower heads (gathered on a warm sunny day if possible),
1kg sugar
2 lemons
45 gm of citric acid
850 ml boiling water

Put water and sugar into a large bowl, stir until sugar has desolved, add the citric acid.
snip the flowers off the heads and add to the bowl then slice the lemons and add them to the bowl, stir daily for 5 days and then strain and bottle in sterilised bottles. If using sterlised bottles it will keep one year if kept in a cool place.
To servie dilute with cold water (either tap or fizzy0
lovely with lots of ice

I make lashings of elderflower cordial every spring/summer, although my recipe is slightly different to the one here. It's delicious served over ice and a slice of lemon/lime with fizzy water.

I also make Elderflower cordial but with 1 lemon and 1 oz citric acid. It is so simple to make, very cheap and absolutely delicious. Elderflowers seem to be in great abundance this year too!

ELDERFLOWER CORDIAL

2kg sugar
2 pints boiling water
20 large flower heads
2¾oz citric acid
1 lemon sliced
Grated rind and juice of 2 lemons

Try to collect flower heads in sunshine (honestly, the taste does differ according to when picked). Clean by flicking elderflower heads onto a counter top and have a damp j cloth to hand in order to wipe up the tiny black flies you’ll expel.

Add sugar to boiling water in a large pan, cook over low heat and stir thoroughly until dissolved. Remove from heat then add lemons and citric acid before stirring in the flower heads. Cover pan and leave overnight (about 12 hours is good). Strain through muslin and keep in the fridge.

Serve with still or sparkling water over ice and a slice of lemon and lime and you will never want to drink shop bought elderflower cordial again. grin

Elderflowers go beautifully with gooseberries. Add a head of elderflower to gooseberries when you cook them. Perhaps give the flowers a gentle wash first or at least a good shake! Remove the head of flowers before serving the gooseberries.

Also wonderful with Rhubarb. Just drag the clean heads through the cooking rhubarb ,then discard them.

I have a purple one and a standard one so will try this. DS1 & DiL don't drink and like this as a substitute but I have always bought it.

So I made it on sunday it tasted great .I put it in a dark cupboard .Opened the cupboard today to show off and all the tops /corks had popped off the bottles and its slightly fizzy .Pleeeeez don't say i have to throw it away .Where have I gone wrong.? help

Don`t know about the cordial, but as a child I loved to eat elderberries, by the bucketload!

Made my first batch ever the other week. Martha Stewart recipe. Just lemons, sugar and elderflowers, it is delicious and supposed to be excellent with vodka. I dont think shelf life is very long.
