Freezing biscuits?

I've just made some ginger biscuits and some shortbread, because we have guests for tea. However, there will probably be lots left over and I am trying really hard to be disciplined about my diet - and its working slowly!- so I really don't want to eat them every day for the next week or more. Do you think they will freeze ok until the next lot of visitors?

They'll freeze perfectly MrsJJ. A minute in a nice hot oven once de-frosted will put them back to being crisp and as they should be.
Good for you, thinking of your waist as well as no waste! smile

It is normally better to freeze the uncooked biscuit dough and bake as required. I was interested to hear that frozen cooked biscuits can be crisped up. I would not have thought it possible.

I didn't know that about crisping, either, but I've been freezing cookies - okay biscuits - for years. I tend to bake in big batches and then freeze them until needed. Freezing the dough also works but isn't so handy for last minute guests.

My older grandson is still on half-term break. He and his little brother are due any minute and we'll ice the assorted-shape shortbread cookies we made and froze last week. I suspect there will be nothing to freeze today!

I'd have to freeze the uncooked mix, but perhaps that would taste good too. Oh dear, better check in to this mornings "weigh in" with glass

I have always frozen all types of biscuit successfully. Some, like digestives and cheese biscuits, can be eaten almost right away. I had some bought "homemade" type of biscuits (thickish) and I popped one in my microwaqve for a second or two as I wanted to eat it straight away and it was fine. I live alone and a packet lasts me ages and I hate stale biscuits,

Oh yogagran - uncooked biscuit mix.....cookie dough......cake mix.... (sorry, just indulging in my equivalent of porn these days)wink
