I must try this! I have far too much banana bread in the freezer, made when they become over ripe!

I'm the only banana eater in the house too (unless the DGC are here) and like them fairly unripe, although they often give me terrible heartburn. I'm going to try wrapping them up as speck suggests. If they've gone past their best I pop them in the oven, complete with skins still on, until they're completely black and soft. Cool them a little, peel and serve still warm with a scattering of demerara sugar, a slosh of brandy and a spoonful of cream, creme fraiche or something similar - delicious

I cant eat green firm bananas, they have to be lightly speckled wink then they taste like a banana

The starch changes to sugar when they ripen. I prefer them spotty. Mashed into yoghurt for breakfast.
Oh dear - now we have really gone bananas! As if hairy armpits and knee sniffing weren't enough. [hysterical emoticon]

I seem to be able to digest speckled bananas far easier than those that are more firm,I am the only one in our house who eats them so I only buy 3/4 at a time.

Absolutely, tanith - that's exactly it! They don't taste the same once the skin starts to discolour.

I think once they go speckled the texture changes and even though they are perfectly ok to me they taste like cardboard.. here's hoping the foil wrap works..

I hang mine on a hook in a very cold room. In fact, I have found that many which are speckled on the skin are actually perfectly sound inside.

Me too. I'm fed up with buying them and finding they've gone speckly and brown within days. I only like them when they're just off green!

I'm going to be trying this when I buy my bananas tomorrow specki4eyes. I never put bananas in the fridge so I hope you are right grin.. only time will tell I guess.

Want to keep your bananas fresh for a week? If you buy them once a week as I do, you probably find that after a few days, they're black and soggy. So here's what to do. Separate the bunch, making sure that the opening bits at the top stay intact. Then carefully and tightly wrap each banana completely in foil and put them all in the veg box in the bottom of the fridge. You can re-use the foil several times if you're careful.

Prepare to be amazed! Oh and by the way, it will only work with bananas that are firm and unblemished. Also, don't tell me life's too short to wrap up bananas! grin
