Simple eating

As a contrast to the posh dinner thread (I couldn't eat any of those menus at one sitting! wink), I thought I'd start a simple meal thread.

My lunch today (actually several days this week because it's quick, easy, and what I fancy at the moment) was a hunk of cheese, a handful of sultanas and a cup of tea. Usually the sultanas are dried cranberries, but we're out of those. DH couldn't find them in the shop.

I like a bacon sandwich or bacon and egg.

For something for other people to eat with me I do equal amounts of chick legs red onions and potatoes into nice sized pieces. Sprinke with salt, pepper, and olive oil. Bake/roast in the oven till chicken is done.
SOOOO simple DH does it.

Lunch was nice and easy chicken rolls and hummus with a hot cup of tea,and for dinner it will be a quick and easy chilli and rice put together in five minutes earlier to-day,followed by some M&S ice-cream which shouted buy me when I went past the freezer !! grin

Dover sole bought on the quai at Ouistreham straight from the fisherman, "chips" made from new potatoes parboiled and cooked in olive oil in the oven, home made tartare sauce with chive and parsley from the garden, frozen peas because the salad in the fridge had gone too limp!

In the interest of trying to lose weight I am 13st 8 lb and 5ft 7 today i am eating
Porridge with stewed rhubarb - rhubarb from the allotment

spring vergetable broth with some bread - leeks from the allotment

fish stew - leeks from the allotment- and cinnamon pancakes I suppose I should leave out the pancakes really but I do like a pudding

Lunch will be ham, lettuce and tomato sandwiches on multigrain bread. Supper will be griddled chicken breasts stuffed with pesto, new potatoes, cauliflower and gridded tomatoes. I don't do puddings, except when we have dinner guests, but there is ice cream in the freezer and home-made grape jelly in a cupboard if Mr absent fancies that (In fact, they're still in the freezer and cupboard even if he doesn't fancy them.)

DH had upset tum, might have had something to do with drinking almost a pint of tomato juice which was wildly out of date! So on my ownsome for tea.
Dry fried some sliced mushrooms [try it, you get a really good flavour] and popped in an individual pouch of Lloyd Grossman's Tomato and Marscapone sauce. Boiled some Riggatoni. Stirred in a tsp of good pesto and topped with mushrooms in sauce. Yummy. DH back on form today. So I defrosted some beef casserole and whizzed up some dumplings. Will need another pasta fix soon!

Before I went for my walk this morning, I put a skinned chicken leg, one large potato cut into cubes, some frozen carrot, leaks, onions and mushrooms in a big pan, made stock with two chicken stock cubes, added garlic powder, black paper and a very small amount of salt and when I got back I put it on to simmer for a couple of hours and added macaroni and tinned peas for the last 15 minutes. It was absolutely delicious and will make my main meal for at least another day - possibly two more days if I eat it with some French bread.

Fresh baker's granary rolls and ham, apple and cup of tea for lunch. Pan-fried salmon steak, new potatoes and peas and fruit corner yoghurts for dinner. Why is it always called "pan"fried? Where else could you fry it?

Oeufs Florentine sounds complicated but it is just buttered spinach with a few eggs cracked into gaps (two for him, one for me), a sprinkling of salt, pepper and nutmeg, a dash (or two) of cream and a layer of grated cheese (whatever's in the fridge). Heat 'til bubbly. Then eat with crusty bread. Delish.

Tonight we're having salad with little tartlets (thank you M&S) as I've been shopping and cooking for friends who arrive tomorrow and will stay with us until Saturday. As the forecast is foul we'll probably have spag Bol for lunch (have just made Bol sauce) and salmon and stir-fried veg for supper.

And the wine will flow ... wine

Poached eggs on a toasted muffin for lunch. Prawn salad for dinner. (Have seen possible outfit for daughter's wedding and want to buy it in a smaller size smile. )

DH has gone out for the evening to a chaps-only dinner, so I shall be having prawns with noodles and leeks from the garden, plus wine. And then watch a DVD that I know he wouldn't enjoy smile

We had lovely fish cake things from M & S with salad, piece of Camembert and fresh pineapple with yoghurt for lunch.
This evening DD, SIL and DGD are due home from a holiday in Brazil ( visiting SIL family) so I have big pot of coq au vin ready and veg prepared for cooking when I know their ETA and a fancy ice cream pudding I bought.
