Ana maybe you should try Venison Sausages. Not much fat.
There is a Delia recipe from back in the eighties. It was lovely.

DD1 has a slow cooker sausage recipe that uses cider for the liquid. You can substitute apple juice, but she doesn't as a rule wink

I have just cooked the most amazing but simple meal. I bought a piece of pork shoulder and literally chucked it in a metal casserole dish with a bottle of cider and a pork stock cube. I slow cooked it in a low oven, with the lid on, for four hours, adding some carrots for the last hour. The cider reduced down to the most delicious gravy and the meat just fell apart. Incredible......
