jacket potatoes in microwave

Love jacket potatoes but only done in big oven as nice and crispy, however expense means should use microwave instead but find them soft on the outside and hard in the middle, any suggestion gratefully received. Also any veg receipes for main meal - no garlic - makes me sick.AND does anyone use nuts and seeds .if so how please. Sorry so convoluted and thanks in advance

I didn't think microwaving vegetables destroyed vitamins any more than conventional methods, which of course do destroy some vitamin C. But so much more convenient!

Before cooking potato in microwave I slit skin all round -then place in paper bag .So no chance of splattering .
No comparison to potatoes baked in oven but much quicker and cheaper on electricity

Microwaves do adversely affect the vitamin content of foods, but no more so, and possibly less so, than conventional ovens.

You can cut oven cooking time in half by cutting potato in two and cross hatching it. Painting with oil or butter before cooking gives a pretty,crispy cut surface too.

It does NOT spoil any vitamins.

I hated the frozen baked potatoes too - and they have quite a bit of sodium in them. My old combination microwave had a grill function and a "potato" button, but the new one is more compacted, so I just microwave then use a hot oven / grill to crisp them up.

I used to microwave my vegetables but found out that it spoils the vitamins in them . It used to be so handy too.

I put them in the microwave while the "real" oven is heating up. Then it only takes a few minutes to crisp up the skin.

Well pierced, then put in a basin with a plate on top, that's how I do mine in the microwave and have had no problems yet. I'm happy to eat them like that as I don't like crispy skins.

I was told at slimming World that the frozen jacket post had been deep fried first!!!
I only do jackets in the oven painted with some olive oil first. I never use the microwave hate the thing - if DH didn't use it for his porridge we wouldn't have one. Oh I'm lying I do sometimes do fish in a microwave bag in their - other than that nothing- hate the thing takes up precious worktop room.

I tried McCain's frozen baked potatoes and thought they were awful.

I pierce potatoes all over before putting them in the microwave, on a piece of kitchen towel, for 5 mins like everyone else but will try without. I've no idea why I do that confused

I also do my Jacket pots for about 5-8 mins (according to size) in a microwave first. Then hot oven (200) for 15 - 20 mins. I also do my own 'oven chips'. Wash and scrub pots (no need to peel) cut into chunky slices and dribble a little olive oil and stir them about so all very slightly coated. A small batch can take about 30 mins in oven at 180-200. Half way throgh cooking I stir them around and sprinle with some salt and ground pepper and sometimes some paprika.

Oh sorry! Didn't read that properly! Thought you said McCain frozen microwave chips. Haven't tried their jacket pots. Why would you? I just microwavwe mine, no messing. Don't like hard outers.

Try the McCain frozen baked potatoes. Five minutes in microwave fab you'll never go back. They com in packs of two or four. Go on give them a try. Anne

I have a (quiteold) microwave that has various functions, including a grill. There's a special baked potato button, and one average spud takes about 20 minutes but comes out crispy on the outside. Love it.

Veg recipe for main meal--Stuffed Aubergine, they can be stuffed with a spiced up rice or with beef.. Also stuffed peppers are very nice....

I cook them in the microwave. I cook most things in the microwave. Healthiest way of cooking any veg. If they are hard in the middle, you are not giving them enough time. I don't like tough, hard on the teeth, skins.

I also do 5 mins in the microwave and 20 mins in a very hot oven, straight onto the rack. They come out exactly the same as conventionally baked jacket potatoes.
