They only seem to taste right with lemon and sugar,though I am partial to banana & maple syrup that they serve at our local on Curry Nights as part of the menu.
probably skimmed milk for me as I have more of that than full fat which I buy for OH.. But we do make pancakes every few months or so .. does anyone prefer them the way we do them just lemon juice and caster sugar.. I've tried all sorts of different things to add but always come back to plain old lemon juice and sugar... we ususally end up having 3/4 each , such pigs!!
I have already made my pancakes with skimmed milk, and spoilt the lower-fat option by constructing a stack with ham, Weight Watchers cheese and tomato between the layers. I shall bake in the oven for dinner. I dare say I shall consume the remaining ones throughout the day with sweet toppings, lemon or golden syrup (already had two!). Fortunately it is a non-fasting day today.
My Mum taught me to make Yorkshire Puds batter by "how it looks" so I have never used a recipe and use the same mix for pancakes.
It's only plain flour, eggs and milk but needs to stand for half an hour or so and then have a splash of cold water added to make it the consistency of single cream. Never fails and my DGC love my pancakes as much as my DC used to.
This morning DH told me he had bought a pancake mix. I asked why and he said he thought I wouldn't remember how to make them and he didn't want to look it up so I responded with the 3 ingredients and told him how easy they are to make. It is funny that he will read a recipe from any of the books and go out to buy all sorts of complicated ingredients but when it comes to the really easy things he cheats
I probably won't bother with pancakes today. I cooked seafood pancakes for dinner a couple of nights ago. However, I always use full-fat milk – I don't run a low-fat kitchen.
