skimmed, semi-skimmed or full fat milk?

Semi-skimmed for me. #alotwillbeeaten

kittylester Tue 12-Feb-13 09:35:51

Semi - all the way smile

I probably won't bother with pancakes today. I cooked seafood pancakes for dinner a couple of nights ago. However, I always use full-fat milk – I don't run a low-fat kitchen.

Aunty Bessie is making my pancakes and she won't tell me her recipe grin

Movedalot Tue 12-Feb-13 10:22:46

This morning DH told me he had bought a pancake mix. I asked why and he said he thought I wouldn't remember how to make them and he didn't want to look it up so I responded with the 3 ingredients and told him how easy they are to make. It is funny that he will read a recipe from any of the books and go out to buy all sorts of complicated ingredients but when it comes to the really easy things he cheats grin

Every year I have to look the recipe up again. (I've only been making them for about fifty years).

But it is only once a year. So you forget in between times. Like Xmas dinner.

My Mum taught me to make Yorkshire Puds batter by "how it looks" so I have never used a recipe and use the same mix for pancakes.

It's only plain flour, eggs and milk but needs to stand for half an hour or so and then have a splash of cold water added to make it the consistency of single cream. Never fails and my DGC love my pancakes as much as my DC used to.

I have already made my pancakes with skimmed milk, and spoilt the lower-fat option by constructing a stack with ham, Weight Watchers cheese and tomato between the layers. I shall bake in the oven for dinner. I dare say I shall consume the remaining ones throughout the day with sweet toppings, lemon or golden syrup (already had two!). Fortunately it is a non-fasting day today. blush

Same as absent (full fat kitchen; I'd cook 'em in lard or goose fat too) except I won't be making pancakes. I'm out of eggs.

Ariadne Tue 12-Feb-13 11:55:08

Hadn't given pancakes a thought!

tanith Tue 12-Feb-13 12:43:22

probably skimmed milk for me as I have more of that than full fat which I buy for OH..
But we do make pancakes every few months or so .. does anyone prefer them the way we do them just lemon juice and caster sugar.. I've tried all sorts of different things to add but always come back to plain old lemon juice and sugar... we ususally end up having 3/4 each , such pigs!!

glammanana Tue 12-Feb-13 13:05:33

They only seem to taste right with lemon and sugar, though I am partial to banana & maple syrup that they serve at our local on Curry Nights as part of the menu.

Galen Tue 12-Feb-13 13:29:34

I shall make creeps, tomorrow, possibly? But there again I might not!

Galen Tue 12-Feb-13 13:30:41

I TYPED CREPES! Honest.
B iPad doesn't like French or Latin. Haven't tried greekhmm

Ana Tue 12-Feb-13 13:30:57

They sound lovely, Galen! grin

Elegran Tue 12-Feb-13 13:38:22

My gran once said she did not like them shoes with creepy soles.

j08 Tue 12-Feb-13 14:15:17

Pancakes were delicious. Lemon and sugar (of course).

Made a bad buy of a "perfect for pancakes" pan from JL though. Too shallow. Oil slopped out onto hot hotplate. Pretty flames for a little while there. shock

LullyDully Tue 12-Feb-13 14:15:33

I just 'love' the bought mixture , all you seem to do is add milk and egg, may be wrong. not much else in a pancake I am thinking!!

absent Tue 12-Feb-13 14:31:03

J08 You need only brush the pan lightly with oil when cooking pancakes, then it can't slop anywhere.

j08 Tue 12-Feb-13 14:33:59

I like to give it a good season to start with. Then tip most of it out into a cup. That's when it went wrong.

absent Tue 12-Feb-13 14:36:21

Oh I see – belt and braces. grin

kittylester Tue 12-Feb-13 14:41:39

I do that too jingle but never enough for it to slop out of the pan!

I made my first attempt at GF pancakes today and lovely they were too with lemon and sugar.

When the children were all at home, I always had three frying pans on the go so no-one had to wait too long. One year DS2 ate 14!! grin

j08 Tue 12-Feb-13 14:43:12

It is a very shallow pan. Blame John Lewis!

CariGransnet (GNHQ) Tue 12-Feb-13 15:13:28

Kitty - tell me more about the GF ones! I made some for my DD today but from a mix - they come out so perfectly and my attempts with non wheat flour just haven't been anywhere near as good. (would never use a mix for the 'normal' kind! Honest)

kittylester Tue 12-Feb-13 15:41:22

Hi Kari, I got the recipe from one of those little Goodfood cookbooks specially for GF. The Victoria sponge recipe in there is good, too. And Absent's almond and orange cake is fabulous. smile

It was 140 grams GF plain flour, pinch of salt, 2 eggs, 200 ml milk and 100 ml cold water. Made in the usual way but with an electric whisk (don't know why but it doesn't seem to work if I just use a fork). At this stage the batter looks very sorry for itself. Leave to stand for 30 mins by which time the batter is looking more like normal batter, then whisk in 50 grams of melted, unsalted butter. Cook as normal. Eat all of them blush
