I thought they said some red meat was good for you? I think it was poor quality meat that was the problem though they weren't sure why. We buy prize-winning sausages from our butcher that are just meat and pretty much fat free. Mind you every butcher in France seems to have prize-winning sausages. There seem to be lots of competitions.
