Hi anyone got a tried and tested tasty coleslaw recipe smile

To me most supermarket coleslaw lacks the Oomph! of enough onion and tangy mayonnnaise.

Good quality Mayo, mixed with a little plain yoghurt if you wish to reduce the overall calories - to which you have added some Worcestershire sauce to taste and a little Dijon mustard.
Grate carrot, slice red and white cabbage, very finely chop a little mild onion. The proportions should be as you prefer. More carrot sweetens it and some folks like a lot of mayo.
I will sometimes add a little finely chopped celery if I have it or finish with chopped chives. I also always add a decent handful of large raisins. I give it a good stir to makes sure everything is well combined and then season to taste at last moment with salt and pepper.
There are no hard and fast amounts as far as I'm concerned - its so personal!

An excellent recipe, but I would add that grated nutmeg as seasoning is indispensable.

I like grated Cheddar in my coleslaw, with cabbage, carrot and mild onion. Being always careful of the calories, I use Hellman's Lighter than Light mayo, at 10 cals per tablespoon, so can be really generous.
Today I am having a salad with diced celery, diced and grated carrot, cherry tomatoes, torn lettuce, grapes, grated parmesan and homemade parmesan croutons. All mixed with the above mayo. In other words a 'what can I find in the fridge' recipe!

Like a Southern American recipe? smile 1 head of cabbage finely shredded,2 finely shredded chopped carrots,2T.Finely chopped onion,1/2 c.light mayonnaise,1/3 c. Sugar,1/4c.low fat milk,1/4c. Buttermilk,2T.lemon juice,2T.distilled white vinegar,1/2 t. Salt,1/8 t. Black pepper. MIx cabbage,carrots,onion in a large bowl. whisk all other ingredients in another bowl till sugar is incorporated and pour over cabbage and mix. Refrigerate at least 2 hrs. Longer the better! Mix again before serving.

Or you can add drained tinned satsumas!! I put my cabbbage in iced water to start to make it crispy!

I like some roughly chopped pecans of walnuts myself, and sultanas or raisins. along with grated cabbage/carrot/beetroot or even cauliflower.
If there is an apple that needs using up that can be a source of sweetness. Whatever is in the fridge and is crunchy.

Last time I made coleslaw, along with the usual suspects (but no onion), I added pineapple (sweet and sharp) and walnuts. Refreshing and crunchy.

You can put anything you want in coleslaw it's whatever you like.
I use
finely chopped or grated
white cabbage
onion
carrot
cucumber
as a base

optional is
nuts
fruit
dried fruit

Add a little of the following
whatever dressing you like
mayo
salad cream
vinegar
seasoning if wanted, I never add salt

The result should always be crunchy
not sloppy like the bought ones are,YUK

Salad cream has more 'oomph' than mayo so I use both plus some yogourt. I also make a rosy coleslaw by adding some cranberry sauce. Lovely taste and such a pretty colour.
