Tomato glut soup

With a glut of courgettes, why not make them into soup. Take one pound of courgettes, one large onion, slice and soften in one ounce of butter. Add one pint of chicken stock and simmer until veg cooked. Blend thoroughly. Mmm lovely soup.

sounds good rosequartz. My eldest daughter is staying with us at the moment and is trying to be a vegetarian so I will make this for her.

If you have a courgette glut as well, you can gently fry chopped courgettes, make a tomato sauce with garlic, onions, peppers if you have those as well, a tsp of sugar, salt and pepper, some fresh herbs. Pour over the courgettes, add cheese+breadcrumbs on top and bake.

Tasty and deals with the gluts of courgettes, tomatoes and peppers!

Aka, catch me at the wrong moment and I would cheerfully give him away!

Mishap, I have not used harissa so googled it and found a recipe. We have grown lots of chillies and garlic so I will try to make some.

I tend to make soup when I have produce from the allotment and freeze it in individual pots so I am never stuck for a cheap, easy lunch.

I just freeze excess tomatoes then pop them into stews, soups, etc in the winter.

My recipe for tomato soup is about as simple as it can get - tin of toms (or fresh if you can afford or have your own) big spoon of pesto, small nip of harissa paste, spoon of bouillon powder, some tomato paste - that's it. Cook and whizz!

I got this recipe from a chef - worth thinking about when you order it in a restaurant!

Peel and chop tomatoes (my four year old grandson was surprisingly good at peeling tomatoes).
Simmer in a little chicken stock for 10 mins. Add a small amount of sugar, basil and balsamic vinegar and simmer for a couple more minutes. Blitz and enjoy.
