Weekday lunch

Not sure if we've discussed this before so sorry if we have but I really need some new ideas. I never know what to get for a lunch when we are at home in the day. I cook in the evenings as we like our main meal then but definitely need something in the gap between breakfast (we have a cooked one about twice a week) and dinner. Sandwiches, soup seem to be the main stay - tell me what your having please - give me some fresh ideas. I'll just pop off to make a sandwich - be back soon.

Chicken salad with multi grain baguette and a yogurt today - boring!!! where's the chocolate? Does anyone drink wine at lunchtime? I occasionally have one at Sunday lunch and nod off all afternoon.

Sandwiches are made for lunchtime. Why bother with anything else? Ours get fried (almost dry fried) in the winter and some fried tomatos added.

Only other thing we have sometimes is boiled eggs. Which I love.

Sardines on toast is good too. With plenty of salt. shock

I just fancy something nice and easy to cook. I don't use the microwave much (DH makes something he calls porridge in the mornings - vile mess).

At the start of the week, I make up a large amount of couscous or bulgar wheat or millet, and mix it with chopped roasted mixed veg wg=hich I make at the same time as our Sunday meal the previous day. I mix it all and freeze half. The proportion of roasted veg is high to the grain, especially if I use couscous, as sadly I can't cope with much gluten. I prefer to reserve my gluten intake for cake, being VERY sensible.

So I have a bowl of this mixture most days, add lemon juice or whatever, and add a selection of something different, it can be chopped hard boiled egg, salami, olives, feta cheese, cooked chicken, peppered mackerel - anything really. Just a small bowl is very filling.

I made a bruschetta with half a ciabatta roll, toasted on the crust side and brushed with olive oil and garlic on the other side, then lightly toasted. Served with sliced tomatoes with lots of basil.

ooo both of these sound nice- just read in GH Thomasina Miers keeps sourdough bred in all the time for a quick bruchetta lunch.

I had a small portion of leftover spag bol from last night.

If I have leftover pasta and no sauce, I will throw together a pasta salad (lettuce, cue, toms) with whatever is to hand, usually cheese, ham or cold chicken.
In winter we often have cheese on toast with beans.

I like one of those ready cooked bags of rice they come with different "flavours" added. I can make one sachet last 3 days (frugal expert!) and then I just add whatever is left over in the fridge and perhaps a dressing of some sort.

Sometimes I will have a cheese omelette on its own, today I had game pate with biscuits. Another day it maybe soup and toast, whatever is around and how I feel. I never have a sandwich for lunch as I only like sandwiches made with very fresh bread- hence I eat so much toast.

500calorie day today so low calorie cup soup, two rice cakes and an apple. I did add some home grown tomatoes, lettuce and cucumber as we have lots of each at the moment and I don't think there are many cals in them.

I make lots of mixed salads. I keep jars of haricots or chickpeas in the fridge and add a selection from store cupboard / fridge ingredients of beetroot, goat's cheese, ham, tuna, eggs, tomatoes, green beans, salad leaves, nuts, dried fruit etc.
If we have an evening salad of spelt or bulgar wheat then I keep some back for lunch and add from the above. If we have soup we don't have bread. I also like the packets of mixed grains that you can buy now. We are finding these very useful on holiday.

On low calorie days I have salad or home made soup. On eating days it is usually nice bread with Castello cheese or ham. In the winter I sometimes toast the sandwich. Did anyone see Jamie Olivers ultimate cheese toastie on his Comfort Food programme last night, it looks amazing!

i often have a two egg omelette - so easy to cook; add grated cheese or chopped ham. My other favourite is a tub of humous and finger sticks of carrot, celery, cucumber, courgette, pepper - any or all of these! Plus a yogurt or piece of fruit.

Tortilla / frittata with lots of fresh chopped veg mixed in. Tomato, feta, mint and cucumber, with a crispbread. Wraps as a change from ordinary sandwiches, with hummus or roasted veg from a jar, (I whizzy up a can of chickpeas with lemon, garlic and a glug of olive oil, because I am not wild about tahini). At this time of the year fattoush salad. Rice salad, or any other sort of grain, with any veg or salad stuff lying around, plus tuna or any meat leftovers.
