Tortilla / frittata with lots of fresh chopped veg mixed in. Tomato, feta, mint and cucumber, with a crispbread. Wraps as a change from ordinary sandwiches, with hummus or roasted veg from a jar, (I whizzy up a can of chickpeas with lemon, garlic and a glug of olive oil, because I am not wild about tahini). At this time of the year fattoush salad. Rice salad, or any other sort of grain, with any veg or salad stuff lying around, plus tuna or any meat leftovers.
