Smoked salmon in the freezer left over from Christmas?

You might like to try this. The proportions don't really matter, just use the amount of cream relative to the amount of pasta. I suppose the amount of pasta will depend on how many people are going to eat it! smile

Bung some cream in a bowl, either 5 fl oz or 10 fl oz.

Snip your de-frosted smoked salmon into smallish bits. Add to cream. Cover with clingfilm and leave for at least 2 hours, but pref. most of the day.

Cook pasta (spaghetti, tagliatelle or linguine). Put the cream & smoked salmon mix in a saucepan over a low heat and heat gently DO NOT LET IT BOIL. Drain pasta, put back in pan, pour the sauce over it and season with freshly ground black pepper to taste.

Serve.

I did the same, it was on half price offer in Waitrose! grin

I did post another smoked salmon recipe before Christmas, Delia's Smoked Fish Creams, yummy but need to be prepped the day before.

Similar idea:
Stir fry s/salmon until it changes colour,
stir in creme fraiche (full fat) and chosen herb, chopped (I use parsley or dill)
Pour over cooked pasta (shells are good as they make little reservoirs for the sauce!)

I can never have too much smoked salmon. I have it on my 5:2 days (no cream and pasta though, just some salad). It is low on calories and not expensive these days.

Thanks for all these ideas.I like s/salmon,H not so keen so it is suitable by scaling down for one. H is not DH at the moment so he can have anything I can find!!

Just being b****y minded phoenix and as anyone caring for someone with dementia knows, they can't help it and don't know they are doing it, but it is still darned hard work and difficult.I will feel different tomorrow but tired today.And his is supposed to be only mild to moderate.

I use exactly the same recipe as phoenix but when pasta is almost cooked add some frozen peas and sweetcorn mix. This gives the dish a bit of colour and added texture.

Seconded, it must be hard to stay yourself at times.

I do almost exactly the same recipe as Phoenix, but with greek yoghourt and a squeeze of lemon. If I have any cream (very rare) I do sometimes add a dash.

Tesco often do cheap offcuts of smoked salmon and I use those, but I soak them in water first as they can be very salty.
