Green Soup
Chop leeks, spinach, celery - add one veggie cube, almost cover with water and boil until soft. Add half a ripe avocado and liquidise with a stick blender. Season and serve with a swirl of cream. Delicious.

Just had tomato and basil soup for lunch - sautéed onion, can of choppped tomatoes and a large handful of basil, chopped. When I took the blender to it, I added a tbsp of low fat soft cheese as I react badly to cream and this works just as well for me. I often make leek and potato soup, always adding a good grating of fresh nutmeg.

Courgette soup is good too. Very simple to make. Just two or three courgettes, depending on size, one large onion and enough chicken or veg. stock to just cover. Simmer until soft and liquidise in a blender or use a stick blender. Season to taste with salt and black pepper.
Last time I made this In used the new knorr stockpots. Yummy.

When my son was a teenager we took him on a cycling holiday to France - something he was prepared to do - and every evening we were presented with a huge tureen of pottage it was always absolutely delicious and I would have quite content with that but we ploughed on through the next 4 courses - didn't take much persuading though! All divine

Mine has to be Cauliflower and Blue Cheese,any blue cheese will do so it doesn't have to be expensive plus a nice dollop of cream when blending or as you serve,goes down very well with crusty rolls.

Hello! Nice thread here indeed ;) As for me, my favourite soup is creamy roasted mushroom soup. It is so easy-to-make and delicious! Try it sometime too. The recipe is on foodjj.com website. Thanks for your recipes here too, by the way

i am going to try some of these recipies as a change from my usual lentil amd broth soups,i really enjoy soup at any time.

When I do a cheese board, I always buy a big piece of Stilton and use the left overs to make cauliflower and Stilton soup.
Fry an onion until soft, add veg stock and a whole cut up cauliflower. Simmer until soft and put in chopped up Stilton including rind and a teaspoon of mustard powder in the last couple of minutes so the cheese melts. Liquidise and thin with cream if required. Quantities are very ad hoc. I've even added a cut up broccoli stalk to save wasting it.
Like grannyactivist I've been cutting carbs and eating more veg and fat, so this is perfect. Have lost a stone too! Highly recommended diet grin

Changed plans! I made a sort of chowder with onion, leek, potato, sweet potato, carrot and baby corn. Very nice too.

I make my own but I sometimes cheat. Asda sell packets of 'soup mix'. I don't mean those dried packets. They are sold on the fresh veg counter. Packets with all the ingredients already chopped, you just add water and a couple of veg stock cubes. They do vegetable, carrot and coriander, potato and leek. Not bad.

My favourite recipe is really for later in the year when I have lots of home grown tomatoes.
Pour boiling water over tomatoes to loosen skins. Peel the tomatoes (my 4 year old gs is good at this) and chop roughly.

Put the tomatoes in a pan with:
a small amount of water and a knorr chicken jelly stockpot
some grated carrot
splash of balsamic vinegar
dried basil, small amount of sugar and black pepper.

Simmer for about 15 mins. Blitz if you want and serve with crusty bread.

I freeze some in individual bowls as I enjoy this for lunch.

I've changed my eating habits to exclude sugar, reduce carbs and increase fats and green leafy veg and soups are my standby for when I want to get lots of the latter in one meal. For years I've been told that fat is bad and now I'm loving having lashings of butter and cream. smile

We had chicken pot-roasted with bacon, carrots, celery, onions, garlic, tinned tomatoes, stock and thyme. The chicken is served on top of the vegetables with some broth but I always make twice as much broth and we eat that for lunch for the next couple of days. It tasted really healthy!!

I also roast lots more butternut squash with ginger and maple syrup than we can eat with a meal and make soup with the left overs!! usually with some crispy bacon sprinkles and a little grated gruyere!

Thank you, grannya, I may try that tomorrow. I have all the ingredients apart from celery, but I have a courgette so I could throw that and/or broccoli in instead!

Oh! No cream either, but never mind.

I'm learning a lot from GN today; I'd never heard of orzo before. Sadly I'm not eating bread OR pasta so won't be using it any time soon, but it was interesting to discover something new.

I sometimes do a sort of chowder, smoked fish, potato, sweetcorn, prawns etc but I'm 99% certain that I posted the recipe on another thread ages ago!

I usually juts use whatever veggies are needing using up but have started adding orzo to thicken and give it body as we are not eating bread at the moment.

3 leeks, a large potato, handful of pearl barley, one head of broccoli. Cut up veg and cook in stock till all veg are soft. It's our latest family favourite.

Spicy Parsnip - parsnips roasted in a little oil, with cumin and coriander seeds, blended with milk to desired consistency and served with crusty bread.
