Has anyone made rice pudding in their slow cooker? As we don't eat the skin I thought maybe in the slow cooker it wouldn't have one. If you have the recipe even better.. thanks

I've never tried it, so will be interested to see responses from those who have. I make rice pudding in the microwave - no skin, creamy and delicious. Takes about half an hour.

Sounds good. How do you do it?

I like making it in the oven in the normal way best.

I always make it in the oven and its wonderful but I just thought I wanted to give the slow cooker a try. If anyone wants the skin they are welcome YUK YUK YUK!!

In the microwave put 50g of pudding rice in a large dish or bowl and stir in about 450 ml (3/4 pint) milk and 40g sugar. Cover and cook on high for 5 minutes, then on simmer for about 25-30 minutes, stirring halfway. You must make sure you use a LARGE bowl as it is liable to bowl over otherwise shock.
Personally I love the skin of a rice pudding, so might go back to cooking it in the oven again!

I use my slow cooker on low. Normal recipe. There is a slight skin but nowhere near like it is when cooked in the oven and it is more creamy.

ginny - I would love to try using the slow cooker. How long do you cook it for and do you heat the milk first?

DF and I used to argue over who's turn it was to get the skin smile
These days my rice pud comes out of a tin as I'm the only one that eats it.

Yes, I do rice pudding in the slow cooker as I don't have to worry about it. I have let it burn so often in the oven or in a pan so the slow cooker is great for it. I use Stevia instead of sugar to keep the calories down (but I do add a bit of butter at the end).

Nanabelle No I don't heat the milk firt. Just bung it all in the slow cooker and leave on low. Probably leave it for 4 -5 hours.

Another one advocating the use of a microwave for rice pud here. I do get a kind of skin. A pale and creamy skin. Delicious.

It's quite surprising how much you can cut down on the amount of sugar you use in rice pudding, and it still tastes great!

Same with macaroni. I love an old fashioned macaroni pudding.

I was going to try using Stevia too, (don't tell OH he doesn't like anything low fat/calorie) at least he hasn't realised in fact he can't tell the difference {grin}{wink}
