Hasn't heard about the need the eat healthy food. He throws mounds of sugar, butter and cream into sauces. He's just made a salad and fried a heap of bread in olive oil as part of the salad.

I think he should take a bit more responsibility for cooking healthy recipes for us to follow.

Very few popular chefs appear to only cook 'healthily' in my opinion!

Good for them it would be incredibly boring if they all cooked entirely heathy food all the time ?

It's about everything in moderation I think.

It's my afternoon self-indulgent treat. A cup of tea, ginger biscuit and James Martin's lovely kitchen and garden. He usually has some entertaining guests and the food history section is always interesting.

I also gasp at the amount of butter but that's only because DH is a Yorkshireman and without a restraining hand (mine) he'd happily dive in.

There are plenty of preaching programmes on at the moment telling us what we can't eat. I think we're all off to a 'Sugar Free Farm' tonight on ITV. Can't wait. hmm

I would like to know how he takes a block of butter straight out of the fridge and breaks it into pieces

I just happened to catch his programme this afternoon and I'm surprised to see how keen he is on adding extra calories to everything.

I have woman flu so I'm on the sofa. I've now switched over to watch the hairy bikers. I have some of their diet books, which are full of easy to make, delicious recipes. They seem to struggle to stick to dieting themselves though.

Nothing unhealthy about a heap of olive oil-fried bread in a salad - sounds delicious!

The responsibility as adults is ours - not TV cooks.

Presumably Sadiesnan you're a woman of a certain age - why is anyone else responsible for what you eat?

I agree there is nothing at all unhealthy about butter and olive oil - just wish I could eat the bread!

I'm trying to eat low carbs, so bread is a no no. I'm the only one responsible for what I eat, obviously. Riverwalk did I say, someone else is responsible?

I remember James' TV debut many years ago as a bandana'd chef on Ready Steady Cook. He was so young and shy! I think the butter thing has become his trademark, but, as has been said, we don't have to copy him. My mother was a Yorkshire farmer's daughter and all her cooking was very rich, but so tasty! We didn't put on weight as children though.

I love watching cookery programmes, but don't often follow the recipes.

I remember my first attempt at making a Dundee cake. We'd not been married very long so I was chuffed to bits when it turned out of the tin looking absolutely perfect. I cut DH a large slice and he promptly buttered it and I mean absolutely slathered it in the yellow stuff!!

I was horrified as I'd been brought up on a low fat diet. I had a lot to learn about Yorkshire man. grin

I tried to make his quick Christmas chutney, after watching him do it, as I already had all the ingredients. The amount of sugar was a lot and it was to be put in the pan first to caramalise!

The result was turning into a burnt sticky mess, so I tipped the uncooked sugar into another pan and added all the ingredient to cook. That worked, but the first pan was a dreadful mess!

I love James Martin and DH loves the butter grin James' granny's yorkshire pudding recipe is brilliant and absolutely fool proof.

He used to own a deli in Winchester where I used to live and it was not uncommon to see him behind the counter serving. Lovely chap, very normal in spite of being so well known.

My husband and I went on the Hairy Biker diet. He lost nearly 2 stone, me nothing. I came to the conclusion it was a man only diet!

I like James Martin but rarely cook anything from his books - probably only for a special occasion as its too rich for us but his programmes are entertaining. I recently saw him frying fruit in butter - a bit OTT I thought.

Very likeable chap and I am proud to say that I worked in the same hotel kitchen as himself but unfortunately not at the same time!! - slight age difference!
Having a cheffy background is a recipe for using lots of cream and butter. It improves the flavour of food without artificial additives. It is very obvious that he enjoys his food and is a natural at putting this across. It wouldn't be a good idea to eat his food everyday - but occasionally!!??

Slightly O/T, but mention of the Hairy Bikers reminded me of something. We met them at the Hereford Food Festival a few years ago. They were signing copies of their books and my wife wanted copies of a couple of the books but couldn't get into the room where they were doing the signing because there were steps up to it, and my wife is a wheelchair-user.

So I went in and spoke to Si King (Dave Myers was talking to someone else) and asked them to sign some books for my wife and I explained that she could not get in herself because of the steps. In his trademark Durham accent Si said "She can't get in? That's just not good enough! Come on, Dave" - and the two of them left everybody else in the room and came outside to talk to my wife in her wheelchair. They chatted for about 15 minutes, and signed two books for her with a very personal message in each before going back to their seats. What a great pair of blokes!

I love James Martin and after watching him cook I get started on my good Yorkshire recipies again, and I have used butter and full cream milk for several years. If you are looking for healthy food then natural things like butter and full cream milk are healthy foods. James is right and such food keeps you feeling cheerful.
