Many years ago I had a little Italian recipe book from (I think) Saintsbury's.

It had a recipe for Pesce Fiorentine (sp?) which although it made a mountain of washing up, was a good dish to prepare the day before, as then you only needed to bung it it the oven with some garlic bread, make a salad and bobs your uncle!

I have googled, but with no luck. No doubt I could "busk it", as I can remember most of the ingredients etc, but it would be good to have the original recipe!

The recipe you found, Stansgran, sounds delicious - I shall definitely be giving this a go one day next week.

There is a small, but important, error. If you read through the method, it tells you to make the sauce, and then to combine the fish, eggs and pasta and place in a dish, etc. etc. I'm guessing that should read "combine the fish, eggs and pasta with the sauce and place....".

It's not your error - I followed the link you provided and it was missing there smile

PS, the first two are for swordfish, the third is for sole, and the 4th is for hake

Hi phoenix, I asked a friend who speaks and is married to an Italian, and she came up with these links:

www.toscanaricette.com/pesce-spada-alla-fiorentina/
www.ricettaidea.it/ricette-regionali/toscana/pesce-spada-alla-fiorentina.htm
www.cucinare.meglio.it/ricetta-filetti_di_sogliola_alla_fiorentina.html
guidecucina.pianetadonna.it/come-fare-il-merluzzo-alla-fiorentina-199724.html#steps_0

She offered to translate if need be...

Hope one of them is right!

The recipe from Stansgran sounds like the one asked for. Even if it isn't, it sounds delicious. Thank you Stansgran!

Presumably the recipe did not come from any of the books currently for salt on Ebay?

I have The Sainsburys Book of Italian Cooking as mentioned by "mischief", but can't find this recipe in it, so must be from another book. The recipe from "Stansgran" sounds delicious - I'll give it a try!

If you try"pesce alla Fiorentina " it should work

Is it thishttp://www.find-a-seafood-recipe.com/seafood-pasta-recipe.htmlSeafood Florentine
Sauce
2 oz (50g) butter
2 oz (50g) plain flour
1 pint (600ml) milk
salt and pepper to taste

Pasta Florentine
8 oz (250g) pasta shells
2 eggs, hard boiled and chopped
6 oz (150g) cooked smoked haddock - flaked and bones removed
4 oz (100g) cooked peeled prawns (shrimp)1lb 8oz (600g) cooked spinach - chopped finely
parmesan cheese to taste

First heat your oven to Gas Mark 5, 375F or 190C

Make the sauce. Melt the butter in a pan and thoroughly mix in the flour. Cook about 1 minute - gradually add the milk, stirring all the time. Once incorporated, then cook for about 3 minutes, stirring continually. Taste and adjust seasoning - remember you're using smoked haddock though - go easy on the salt!

Boil the pasta until just cooked.

Combine the fish, eggs and pasta and place half the mixture into a greased oven proof dish. Layer the spinach on top and then the remaining pasta mixture.

Sprinkle the parmesan over and bake in the oven for about 30 minutes.

I still have most of these marvellous little books. One called Quick Fish, by Thane Prince, has a smoked haddock open lasagne in it with hard-boiled eggs. Can I send a scan to this site?

Is this the book. It's on sale on Amazon for 1p.

Pesce means fish (don't know where pesto came from, it wasn't mentioned in the OP). Fiorentine/Florentine is invariably with spinach. Sounds interesting. Please share the recipe with us if you find it.

I much prefer the way Italians cook fish to the Spanish way. I still can't bear the thought of fish with tomatoes, as in a zarzuela.

Would it be worth searching eBay, using terms such as 'sainsbury Italian' to see if you can recognise the book, and probably there or on Amazon it would cost under £3. Can you remember the author?

phoenix Sun 14-Feb-16 19:41:00

No, Skullduggery, not even close, but thanks anyway!

Skullduggery Sun 14-Feb-16 19:16:44

grannylyn65 Sun 14-Feb-16 19:07:12

Oo phoenix, sounds del !!

phoenix Sun 14-Feb-16 19:06:52

algieswifeI have that book too, and it's not the one I mean! And it's definitely NOT pesto!

phoenix Sun 14-Feb-16 18:58:41

Yes,*margsus*, smoked haddock, hardboiled eggs and (I think)prawns. White sauce, pasta and spinach, layered a bit like lasange.

AlgeswifeVal Sun 14-Feb-16 18:56:56

I have the book. It's called Sainsbury's Pasta Italian Style by Patricia Lousada.

However, the only recipe that starts with (in the index) Pesto is....

Pesto alla Genovese. This is a Basil sauce. Unless of course there was more than one Sainsbury's Italian book.

phoenix Sun 14-Feb-16 18:52:23

Thanks grannylyn , I will, bit was definitely fish rather than basil!

Margsus Sun 14-Feb-16 18:50:46

Fish with spinach?

grannylyn65 Sun 14-Feb-16 18:41:51

Try pesto florentine x
