Has anybody got this recipe, please?

Many years ago I had a little Italian recipe book from (I think) Saintsbury's.

It had a recipe for Pesce Fiorentine (sp?) which although it made a mountain of washing up, was a good dish to prepare the day before, as then you only needed to bung it it the oven with some garlic bread, make a salad and bobs your uncle!

I have googled, but with no luck. No doubt I could "busk it", as I can remember most of the ingredients etc, but it would be good to have the original recipe!

I have the book. It's called Sainsbury's Pasta Italian Style by Patricia Lousada.

However, the only recipe that starts with (in the index) Pesto is....

Pesto alla Genovese. This is a Basil sauce. Unless of course there was more than one Sainsbury's Italian book.

Yes,*margsus*, smoked haddock, hardboiled eggs and (I think)prawns. White sauce, pasta and spinach, layered a bit like lasange.

Would it be worth searching eBay, using terms such as 'sainsbury Italian' to see if you can recognise the book, and probably there or on Amazon it would cost under £3. Can you remember the author?

Pesce means fish (don't know where pesto came from, it wasn't mentioned in the OP). Fiorentine/Florentine is invariably with spinach. Sounds interesting. Please share the recipe with us if you find it.

I much prefer the way Italians cook fish to the Spanish way. I still can't bear the thought of fish with tomatoes, as in a zarzuela.

I still have most of these marvellous little books. One called Quick Fish, by Thane Prince, has a smoked haddock open lasagne in it with hard-boiled eggs.Can I send a scan to this site?

Sauce
2 oz (50g) butter
2 oz (50g) plain flour
1 pint (600ml) milk
salt and pepper to taste

Pasta Florentine
8 oz (250g) pasta shells
2 eggs, hard boiled and chopped
6 oz (150g) cooked smoked haddock - flaked and bones removed
4 oz (100g) cooked peeled prawns (shrimp)1lb 8oz (600g) cooked spinach - chopped finely
parmesan cheese to taste

First heat your oven to Gas Mark 5, 375F or 190C

Make the sauce. Melt the butter in a pan and thoroughly mix in the flour. Cook about 1 minute - gradually add the milk, stirring all the time. Once incorporated, then cook for about 3 minutes, stirring continually. Taste and adjust seasoning - remember you're using smoked haddock though - go easy on the salt!

Boil the pasta until just cooked.

Combine the fish, eggs and pasta and place half the mixture into a greased oven proof dish. Layer the spinach on top and then the remaining pasta mixture.

Sprinkle the parmesan over and bake in the oven for about 30 minutes.

I have The Sainsburys Book of Italian Cooking as mentioned by "mischief", but can't find this recipe in it, so must be from another book. The recipe from "Stansgran" sounds delicious - I'll give it a try!
