Rack of lamb with pesto crust

A recipe in the Telegraph on Sat or Sun recommended the same cooking time. As someone on TV said ,a good vet could get that back on it's feet. I reckon 25 mins is right for me. And a properly trimmed rack with 7 cutlets is fine for two people.

Kitty I made some pesto the other day and had some left over, so I tried the recipe but used lamb steaks instead of a rack and grilled for 20 minutes. Served with roast potatoes, butternut squash, red onions and steamed broccoli.

That does sound delicious Kitty, if someone else made it for me!
I've never cooked rack of lamb, but have had lamb chops occasionally. They seem to be mostly bone and very little meat.
We usually have shoulder. Leg is good too.

Not if you want that recipes POGS, I don't think I'll make it again. Actually, some sundried tomatoes in the pesto might be nice too!

JaneA asked for this recipe but I haven't put it in the Recipe section in case some poor unsuspecting person comes along in the future and thinks it will work!! grin

2 racks of lamb (mine had 3 cutlets each)
1 tbs Dijon mustard

Pesto
2 crushed cloves of garlic
handful basil leaves
handful breadcrumbs
50g pine nuts
4 tbs grated parmesan
2 tbs olive oil

Blitz all the pesto ingredients together. Spread the outside edges of the lamb with mustard and then spread the pesto on top using your hands.

Cook at 200c/180 fan/Gas 6 for 12/15 minutes (or about 40 minutes actually!!)

Stand for 10 minutes before cutting into cutlets and serving on truffle mash with red wine gravy.

I made my truffle mash by adding truffle oil to mashed potatoes. I'd have been seriously pee'd off if I'd bought and grated truffles too!! grin
