sweet potato toast

Apparently some genius has invented this - slice off two large slabs of sweet potato, pop them in the toaster and hey presto! Sweet potato toast. Haven't actually tried it yet, but as someone with an obsession for the damn things, I will be trying it out tonight when my sainsbury's delivery arrives! Hmm, now what to put on top...

By the way, I'm not remotely interested in this 'clean eating' malarkey - I just love sweet potato!

I might try spraying slices with oil and baking in the oven, but the result won't be much different from home-made sweet potato oven chips.
Surely when cooked in a toaster they might disintegrate when you lift them out?
